Spaghetti with Spinach and Bacon
I tried this recipe for the first time as a student in accommodation back in London. It was one of those typical student accommodations where people just did not really care much about eating - my hallmate would cook pasta in a frying pan, others would eat takeaways every evening and others would just eat microwaveable food. I on the other hand, I completely reject the idea of pre-cooked meals simply because I have always been used to Italian cooking and pasta. So I have tried out a few, strange, pasta recipes that are quick and easy so they make life a million times easier and actually taste good.
Ingredients for 1 person
- 100g Pasta – Spaghetti
- Half a pack of Spinach
- A quarter of an onion
- Some bacon
- White wine (optional)
- Salt, pepper and Olive Oil.
Method
- Fill a saucepan with boiling water and place on the highest heat with a lid.
- Put a glug of olive oil in a frying pan with the chopped onion. Add the bacon and cook at a medium heat.
- Add a drop of white wine (optional but recommended to add some taste to the bacon)
- When the water for the pasta is boiling, add some salt to the water and then add the pasta. Make sure you check the cooking time and set a timer, but approximately pasta takes 10 minutes to cook.
- Once the bacon is looking well cooked and slightly crispy, add the spinach to the frying pan, also adding a spoon full of cooking water from the pasta.
- When the pasta is ready strain it, add it to the frying pan and stir it all together.
- Enjoy your meal.
