Watercress soup
Preparation: 10 min Cooking time: 30- 40 minutes Serves about 2 people
Ingredients
- 1 leek
- 1 onion
- 2 big carrots
- ½ of butternut squash
- 2 vegetable broth cubes
- 2 hand full of watercress
Recipe
Put the chopped leek, onion, carrots and butternut squash into a pot. Add water up to half the amount of veggies in the pot and bring to a boil. Add the vegetable broth cubes and bring down to a simmer. Wait for about 30 to 40 minutes or until the vegetables are mushy.
Then blend everything with a hand blender. At this moment, you either choose to thicken the soup by letting the water evaporate or add more water.
Once you have your preferred soup texture, add the watercress into the soup and blend it.
Season as needed with salt and pepper. Enjoy :)
