Vegetarian Quesadillas

So on Monday I decided to make some quesadillas for my roommates but I didn't want them to be just cheese, because if we are honest that's a little boring. But one of my roommates is a vegetarian so I can't put meat in them like I usually would so I basically pulled out whatever I had in my pantry and fridge and put it together!

First Ingredients needed

Quesadilla shells (I bought the eight pack)

Cheese (whatever Kind you like the most I got shredded mozzarella)

1/4 zucchini

a can of corn and kidney beans mixed together (can just use normal corn and kidney beans- mine just happened to be in a can)

Process:

First: chop up the zucchini into thin slices and put in a pan and sautée them! Also adding in the corn and the kidney beans. I spiced this with garlic, cumim, salt, and some basil. 

While the veggies are sautéeing heat up the oven to 200 degrees Celsius and take the quesadilla shells and put them on a pan and sprinkle the cheese on the lower level completely covering it. 

Once the veggies are done being sautéed take them out of the pan and spread them equally amongst the four quesadilla shells that you have already lined with cheese! After spreading out the veggies put another sprinkle of cheese on top of the veggies and take the other four shells and place them on top.

Put them in the oven and cook until the cheese is melted or however crispy you like the shells. I like mine  crispy so they were in the over for about twenty five minutes but you can leave them in for longer or shorter whatever you want!

You can also make or buy guacamole and put it on top and that gives it a nice taste! Overall it's a wonderful and filling dish and is great for vegetarians!
