The introduction

Now I want to tell you about my three pizza recipe, I mean, I had this one dough prepared, which then I divided into three parts, because the baking pan was pretty small for that dough and so we had three small pizzas instead of one large and it was pretty much better, than that one large pizza, because then I had o use all my ingredients in that pizza and with these small ones, I prepared some different types of pizza and was really satisfied with my doings, I must say.

Well, first of all, I had this dough prepared. It was an early in the morning and I just felt like I should have eaten some pizza and I didn’t want to buy it somewhere else, because whenever I buy some pizza, they are just plain and not taste like pizzas at all, I mean, they are prepared just some ketchup and sausage and  I really hate that and the some of them may even have some mayonnaise on them. That’s not a real pizza, if you ask me, so that’s why I just prepare pizza myself.

Preparing the dough

So, the very first thing, that I did was to prepare the dough, because it needs some time to get all prepared and stuff, I mean, it needs about two hours to get doubled in size after you have prepared it and that’s what I meant when I said, that it needs time. And I had to prepare the dough, so that I would leave it like that and go shopping for the ingredients for my pizza.

Ingredients:

  • Warm water, 1 and 1/3 cups
  • 1 tablespoon of active dry yeast
  • 1 tablespoon of white granulated sugar
  • 2 teaspoons salt
  • 2 tablespoon olive oil
  • 3 and ½ cups all-purpose flour

Now, first of all I boiled some water and got 1 and 1/3 of it into a bowl and let it get warm , so that I could sprinkle the sugar in it and then sprinkle the yeast on top of it and let it be like that for about 5 minutes. Until then, I took half of the flour and put it into the blender and added the salt and the olive oil (well, if you don’t have that olive oil, you can just use the sunflower oil or whichever oil you have), and blended them together. After those 5 minutes, I added the yeast mixture to the blender and added the remaining flour, too, and blended them together.

Then it was time to take the dough and have it greased with some olive oil. I also took another bowl and I had it greased with olive oil, too, and I put the dough in it and had this wrapping paper on top of it. Then I wrapped the bowl with some clothes, too, and had it put on a warm place, because it needs some warm place to get doubled in size faster, but still, it needs something like 1 and a half or two hours to get doubled in size. So that the time was plenty for me to go shopping and buy all those ingredients and get home and prepare them, so that when the dough was ready I could have everything ready and it would just need to be assembled on the baking pan. And it was a kind of a new technique, I mean, I was going to bake the pizza into the convection oven for the first timeand I was wondering what it would taste like or if it would get cooked well, etc. well, I could have bought some frozen dough in the supermarket, and, to be honest, I have always wanted to try their frozen doughs there, which they have in different supermarkets nowadays, however, I didn’t have a chance to need them and I haven’t tried to prepare them, you know, though tey say, that it’s pretty good idea to have them and not to bother about preparing some dough at home and then wait for it for a couple of hours to get ready and everything. and they even have those frozen khachapuri and lobiani sold in Nikora supermarket, which I find very interesting and I really want to prepare them at home and try them and see how they will get cooked in my electric oven or in the convection oven, however, there has not been a situation for that, I guess. But I hope, that some day I will buy any of them and prepare them and eat them . well, to be honest, I have bought Nikora supermarkets’ lobiani prepared already and everything and it’s really delicious, so that, I guess, that frozen stuff will be delicious, too, however, I will never know until I try, of course.

Anyways, while the dough was getting ready, I could go shopping for the ingredients for my pizza or get them ready for it, so that when the dough was prepared, I would just roll it out and put the ingredients on it and put the pizza into the convection oven. It was that simple, you know. and those frozen pizzas are just the size of that baking pan of the convection oven, however, I don’t really like those frozen pizzas, because they don’t really have all those ingredients that I like. Once we bought that one of the frozen pizzas and it had some stuff, but we wanted it to have some other things, too, and we just bought those other things and added them to the pizza and then cooked it in our oven and it came out pretty good, if you want to know the truth. So that, if you don’t want to prepare the dough yourself, or like some pizza or want to have it all ready and stuff for cooking, you can just buy any of those frozen pizzas and it’s pretty easy to add some other ingredients for your likings then, of course, because they are kind of basic stuff and if you want to have some piquant pizzas at home or if you like this one ingredient, that they don’t have in those frozen pizzas, you can just have them bought in the supermarkets or somewhere else and then add those ingredients to your frozen pizza and prepare it that way.

Anyways, I went shopping for my pizza ingredients and I just needed some of those things, which was pretty easy to choose, because I knew exactly where to buy them and which ones I needed. There was this sale on olive oils at that time in this supermarket and I took that one can of black olive oils, of course . I also took a can of sliced mushrooms, which was pretty small,however, they were more than enough for one pizza there. And I also needed some cheese and I chose some cheddar and emental and the megrelian sulguni, because it looked pretty nice and I hadn’t tasted megrelian sulguni until then and I got pretty interested in its taste, so that I took half of it, too. And, well, some other things I had at home and it was time to prepare the pizza.

Ingredients:

  • Tomato paste
  • Tomato juice
  • Ketchup
  • Pizza spice
  • Oregano
  • Paprika
  • Chili sauce
  • Beef sausage, 1 medium
  • Ham, sliced, 10 pieces
  • Red bell pepper, 1 small
  • Sliced mushrooms canned, 1 small
  • Olives, 5 medium
  • Cheese sauce
  • Cheddar
  • Emental
  • Megrelian sulguni

Preparation process

Well, the preparation process started with the preparation of the sauce and it should have been a great tomato sauce, because it makes the whole pizza taste great and I always try to prepare the tomato sauce very deliciously  because of that. The main thing here is the spices, I guess, because they make the pizza sauce taste like pizza and there’s this special packages of pizza spice,which you can buy and then you don’t need to combine any of those other separate spices just to prepare some pizza spice and this package is pretty large and it doesn’t really cost much and you should really consider  buying it if you want to prepare some pizza. I knew, that they had those packages in Carrefour supermarket, however, when I visited it the other day and I looked for it, they didn’t have it there and I was pretty surprised, because I had bought that pizza spice packages there the other times. Anyways, you should buy that pizza spice whenever you see it, because it’s a good thing to have at home if you like preparing pizza yourself.

So, the preparation of the tomato sauce is pretty simple, however, you should first taste it and then pour it onto the dough, of course. You should combine some tomato paste and it depends on the taste of tomato paste,I usually put 1 tablespoon of tomato paste in my tomato sauce and then there comes the tomato juice and I had it kind of plenty in my sauce, because I liked the taste of it and then I added some ketchup, too, and the chili sauce, however, thye were not much in my sauce, because they still had this distinguished taste and I didn’t want to ruin my pizza sauce by adding too much of them. And I also added the pizza spice, of course , and I added more oregano to the sauce and some paprika, too, however, they were already in that pizza spice, if you want to know the truth. And when I stirred and mixed together  all those things, then I tasted my pizza sauce and it tasted good and that was it, it was ready and I set it aside.

Next, it was time to roll the dough out. I took my dough and it was pretty much larger than I left some hours ago and now I took a piece of it, I mean, I had it divided into three parts and I just needed one of them for this baking pan, because it was not very large and that one third of the dough was pretty much enough for it. So that, I greased the pan with some oil a little bit and then rolled the dough out on it with my hands and fingers, because it was pretty small and it didn’t really need those rolling things and stuff like that. And I poured some olive oil on top of it, too, and greased the dough with it.

I had already chopped the sausage into small pieces and I had sliced the ham slices into smaller pieces, too. I also washed and sliced the red bell pepper and I had those olive oils sliced into those round shapes, too.

I had some water boiled in my electric kettle and I opened the canned mushrooms and took the mushrooms out of the can and put them into a bowl and poured that boiling water on them, so that they would get rid of that canned juice or whatever, at least, that’s what they have told me to do some time ago and that’s what I usually do when I open things like mushrooms canned or peas or whatever. So, I had them ready, too. And then I just had to shred the cheese.I did that on that hand shredder and it was kind of time-consuming, however, I shredded it and now it was time to assemble the pizza, because everything else was ready.

Well, first of all, I had my pizza sauce spread all over the pizza dough and it was just fine, not too much and not too little, either, so that one would feel the pizza sauce taste in their slice of pizza , of course. Then I added the chopped sausages and and ham pieces, however, I think, that it would have been better, if I just had added the mushrooms first on top of the pizza dough and then the sausages and ham, because I remembered, that once my friend told me, that it’s better to have those mushrooms and then cover them with the shredded cheese, because that way they won’t get dried and they will have their own taste after you have prepared the pizza. However, I did it that way and now I could just leave those sausage and ham pieces there, because they already had that pizza sauce on them and I didn’t want to get all dirty and stuff just because I didn’t put the mushrooms first. I could just add those mushrooms on top of those sausage and ham pieces and that would just be it, you know. there wouldn’t have been a problem there, I guess. So that’s what I did and though I added some shredded cheese on top of that sausage and ham pieces, too, I added the sliced mushrooms after that and then I poured the shredded cheese on everything on top and I had it plenty, I must say, because I really love when the pizza has that melted cheese all over and when you can take one slice and the cheese is meltingall over the place . that’s just heaven and everyone loves that, if you ask me. To be honest, I have never had pizza done like that, so that the cheese would melt all over the pizza like that and I always wanted to do that, however, whenever I try, I never get that result and I don’t  really know why. Perhaps it’s about the cheese or the heat in the oven, I don’t really know, though I have tried many things including the heat and cheese, I mean, I have tried all those different cheese, but I can’t get the melting cheese here. However, I’m not giving up and I am going to continue trying until I get some great results and then I will know, how to prepare the perfect pizza, if you want to know the truth. So the digging continues!

Anyways, after I added that cheese to my pizza it was time to add the remaining ingredients and those were the red bell peppers  and olives, which I had already sliced. So that I put them on top of my pizza and it  was all beautiful and stuff, you know. and then there was this small detail, which  I waned to try. I had this cheese sauce bought the other day in the supermarketand it tasted pretty good and I was wondering what it would be like if I used it in my pizza, so that I had some of it poured on a small piece of my pizza, so that I would taste that slice and see if it was good with the pizza or not. And it it was good, then I could easily use it in my other pizzas and not buy those different cheese and shred them and everything. so that I added it to the pizza , too, and then it was time to have it in the oven, which was preheated and I had that high rack put inside the convection oven and placed the baking pan full of pizza on it.

Well, I had the convection oven for 40 minutes on 175 degrees Celsiusand since it was my first time preparing the pizza in my convection oven, I didn’t really know what to expect, so that I had my eyes on it and checked it from time to time and I thought, that maybe it would need to have some heat turned up or something like that, however, I still left it like that and didn’t change anything and I waited for it to be prepared. Though I didn’t know, when exactly it would get ready or how I would undersand, that it was ready, I could still guess, when it would be ready, so that when I checked it and it looked kind of good and delicious and the cheese was melting, too, I decided , that it was getting ready and after some time I just turned the convection oven off and took the pizza out.

I had this pizza knife especially bought the other day for my pizza party and I wanted to use it in cutting the pizza this whole time and finally the time had come and I sliced the pizza with that pizza knife. When I tasted the pizza, I realized, that the dough was not fully baked and then I decided to have it put in the electric oven and have the heat from the downside on the pizza dough, so that it would get cooked well. I guess, the dough was not very well cooked, because there were so many things on top of it and the convection oven doesn’t  have a heater on the bottom, it just has the heater inside the lid and it kind of heats from the top.

So, after a couple of minutes, I took the pizza out and tasted it and it was just perfect and we ate it all, it was that delicious. well, we like the pizza to have plenty of ingredients and, I guess, that’s why the dough was not baked enough, however, I could just bake the dough a little bit until I put all those ingredients on it and that way it would all be just great.

Anyways, this was about my pizza recipe and then I had the other two prepared, too, and I had considered all those things, that I mentioned here above and did that preparing dough first and then adding the other ingredients and stuff like that and everything just came out fine, so that if you have a feeling, that you want to prepare some pizza, you can use this recipe to prepare it.
