The Egg Maniac
Hello friends, hope you are all doing well. I really didn't know that I'm so much interested in cooking till I began writing here in Erasmusu. In this section of my blog I would like to share with you all an easy but delicious Indian recipe of making Egg Fry. There are different varities of Egg fries and currys made in India however I will explain a few of them which are my most favorite ones. Eggs are my favorite among foods and I just love anything made with eggs. I'm really attached to the flavor and aroma of the eggs. I can eat how much ever eggs I want without getting bored.
The first dish for today can be called as "Boiled Egg Fry". For this you may need some very commonly available ingredients which are as follows.
1. Eggs - how much ever you need. Let us keep it to be five
2. Salt - To taste
3. Chilli Powder - 2tablespoons
4.Water - Few drops
5. Oil - As needed.
How do you prepare the dish? It is really simple. First place all the eggs in a container and add water till the eggs get submerged. Add some salt and little oil. Then place the container in a stove and boil it. Wait till the eggs get completely boiled. Once it is done remove it form the stove. Be sure that you don't turn off the stove before the eggs boil. After removing the container from the stove remove its shell. Gently draw two or three lines on the egg with a knife without cutting it fully. Take a bowl add chilli powder, salt, and a little water to make a thick paste. Put the boiled eggs into it and mix it without breaking the eggs. Leave it for sometime till the mixture gets soaked to the egg. After 30minutes turn on the stove place a sauce pan on it. Add a little oil and wait till it gets heated. Then take the eggs from the mixture and place it on the oil. Keep the stove in simmer so that the eggs doesn't gets scorched. Be careful becuase the eggs may crack open and sprinkle oil on you sometime. Keep turning the egg constantly till it gets fried. You can recognize by seeing the outer surface of the egg that will turn golden brown and shrunken as it gets roasted. Once you think that the roasting is enough you may take it off from the stove and boiled egg fry is ready.
The next dish I'm going to discuss with you here can be called as a "minced egg fry". Don't really bother about the names because I was the one who kept names for this dishes here. Believe me all these dishes will be tasty. The ingredients that you will be needing to prepare this dish are as follows.
1. Eggs - how much ever you want [Keep it to be five]
2. Onion 1nos
3.Green Chilly 1nos
4.Mustard seeds - 1teaspoon
5. salt - To taste
6.Oil as needed
7. Chilli powder - 2teaspoons.
Now let us see how to prepare this delicious dish.! Place a sauce pan on the stove and light it. Add a little oil on the sauce pan and wait for sometime. As the oil gets heated add a teaspoon of mustard seeds. If the oil is ready the mustard seeds will pop up. Then add the onions which is finely chopped. Saute it for a few minutes till it becomes translucent or till it turns golden brown. Then add finely chopped green chilies into the onions and continue to saute it. After a minute add a little salt, chili powder and mix it well. Then break open the eggs into the mixture and start mixing. The eggs will get fragmented and will blend with the mixture. Keep on mixing it unless your eggs get soldified like fragments of omelet. Then turn off the stove and your mince egg fry is ready to serve.
The above mentioned two egg recipes will belong to the "Fry" category. They are really easy and you can try them for sure. Moreover you don't need any kind of complex ingredients to prepare them. The recipes which I'm going to speak after this are alittle bit difficult as they are under the "Gravy" category and you may need some spices and masalas for preparing them. Still you can give it a try when you are free if you really want to taste something different from your regular egg menu.
The other dish which I'm about to share with you here is the traditional Indian Egg curry. This is a bit complicated than the above two and consumes a little more time. Still it is not a complex process. The ingredients that you will be needing to prepare this dish are mentioned below.
1, Eggs - 5nos
2. Onions - 2nos
3. Tomatoes - 2nos
4. Green Chilies - 1nos
5. Ginger Garlic Paste - 2teaspoons
6. Spices - cumin seeds 1teaspoon, mustard seeds 1 teaspoon, bay leaves 2nos, cinnamon sticks 1no
7. Salt - To taste
8. Oil - As needed
9. Chili powder - 2tablespoons
10.Coriander powder - 1tablespoon
11.Garam Masala - 2teaspoons
Let's now learn the method of preparing it. First take a vessel and place it on a lighted stove. Add a little oil and wait till it gets heated. Once the oil gets heated add the spices mentioned above such as cumin seeds, mustard seeds, cinnamon sticks, cloves, bay leaves one by one and wait for a few seconds till you can smell the aroma of the spices. Then immediately add the finely chopped onion and saute it for a few minutes. The onions should turn into a golden brown colour or become translucent after which you can add the finely chopped green chilies. Saute it for another couple of minutes after which you must add the ginger garlic paste. Wait for 2 minutes after which you must add the chopped tomatoes and continue to saute the mixture till it gets condensed. After this you have to add a salt, chili powder, coriander powder, garam masala and mix it well. The masala should be cooked therefore wait for another couple of minutes after which you can add two or three glasses of water depending upon how thich you want your curry to be. Less water more thicker..! Allow the mixture to get boiled for 5 or 8 minutes. When you can see bubbles on the surface stir it well. Then take the eggs and break open into the boiling mixture. Turn the flame to a simmer and after this you must not stir your curry. If you do so the eggs will get dissolved in the curry. Therefore keep the stove in simmer for five or ten minutes. After this time the eggs that you poured into the mixture will get solidified now mix it very gently for one time and that is it your spicy Indian egg curry is ready to serve.!
The final dish that I would like to share with you all here is another kind of egg curry that is quite different from the above mentioned ones. This will give you an egg curry in a completely different form showing no characteristic features of an egg, It will appear to you as a cheese curry but it is really an egg curry. Let us now consider the chief ingredients that are needed to make this curry.
1. Eggs - 5nos
2. Onions - 2nos
3. Tomatoes - 2nos
4. Green Chilly 1nos
5. Ginger Garlic Paste - 2 teaspoons
6. Chili powder - 2 tablespoons
7. salt - To taste
8. Oil - As needed
9. Spices - Cumin seeds 1teaspoon, mustard seeds 1 teaspoon, bay leaves 2nos, cloves 4nos, cinnamon sticks small 2nos
10. Garam Masala - 2teaspoons
11. Coriander powder - 1 tablespoon
That's all..! Now let us see how the dish is prepared. The process is a little bit difficult in the beginning especially during the process of steaming and after that it is similar with the normal egg curry.
The first process involved in preparing the dish is steaming the eggs. For this you will need a small vessel that will fit inside a larger vessel. Take the small vessel and break open the eggs into the vessel. Add a pinch of salt and blend the eggs well. Then take the larger vessel and fill it partially with water. Place the small vessel containing the eggs inside the larger vessel. Make sure that there is no excess amount of water, If the water gets inside the eggs then the dish will be a complete mess. It is enough if there is enough water to reach the quarter of the small vessel. Cover the vessel with a lid and place it on a lighted stove. Leave it for about 10 minutes till you can see steam coming out of the vessel. When steam starts coming leave the vessel in the stove for some more time such that the eggs get steamed well. After the steaming process turn off the stove and wait for sometime for the eggs to cool. Then open the lid and take out the small vessel. Now inside it you can see egg in the form of a big cheese cake.Remove the egg from the vessel with the help of a knife. Cut into pieces of your desired size but not too small. Then keep the cut egg pieces aside.
Turn on the stove again and place another vessel. Add a little oil and wait till it gets heated. After that add the spices which includes mustard seeds, cumin seeds, cinnamon sticks, cloves, bay leaves. Wait for a couple of seconds then add the finely chopped onions. Saute the onions till it turns into golden brown colour or till the onions become translucent. After this add the finely chopped green chilies and continue to saute for few minutes. Then add the ginger garlic paste and continue to saute. Wait for a few minutes and then add the chopped tomatoes and saute them. The tomatoes will lose its water and then add the masalas which include salt, chili powder, coriander powder, garam masala into the mixture. Saute them for a few minutes till the masala loses its raw flavor. Then add two or three cups of water depending on the consistency of the curry you need. Wait for the water to boil and when it is done you can see bubbles on the surface of the curry. Now add the cut pieces of steamed eggs that you already have. Mix it well with the gravy and turn the stove to simmer. Continue heating the gravy for another 10minutes till you get a thick gravy. Turn off the stove and empty the contents into a bowl. Your delicious egg curry is ready to serve..!
Please note:
i] If you don't have garam masala then you may refer to my blog post about chicken curry where I have mentioned how to make garam masala at home.
ii] You can change the levels of masala you add depending on your individuality.
iii] If you want your gravy to be thicker you can add some coconut milk at the end and continue boiling it for a few more minutes.
iv] Adding coconut milk will reduce the spicy nature of the curry therefore you must proportionately increase the masalas to get a delicious egg curry.
These are few of my favorite egg recipes. They are really delicious and you must try them all at least once. Whatever food it may be you cannot expect it to be perfect the first time you try it. You will need time to master the dishes but still the first two dishes are really easy and anyone can master them at their very first try.
