The introduction

Hello everyone, I hope that you are all doing just fine!

In this article I want to tell you about the well-known spinach and some recipes of its preparation.

Well, I’m sure, that you all know, that the spinach is not something, that people don’t love and that it has many different vitamins and things in it, that are very useful for us and we should take the spinach from time to time to have all those vitamins get inside our bodies. Of course, everyone knows, that the spinach is just  a plant and it contains low calories in it, so that people, who are on a diet or want to eat not many calories, then   the spinach is a perfect  solution for them. And it’s not an expensive product, for example , in my country, however, I don’t really know, how much it costs to buy the frozen spinach, because it’s not something, that you can always buy here in Georgia. And I remember this unusual occasion, when I really wanted to prepare some spinach and when I went to the bazaar, where I usually find fresh spinach to buy for myself in reasonable prices, and when I asked whether they had spinach or not there, this old lady just made fun of me and answered, that it was not a season for spinach at that time and I wondered, then how were all those supermarket shelves and family diners full of prepared spinach with ground walnut? Well, then I don’t know. maybe they buy the spinach when it’s its season and then they just have them in the freezers and freeze them and they take them out just when they need them.

Anyways, we all know, that the spinach is a very good thing and people in Georgia really love eating it, however, they just have mainly two or three type of dishes with spinach, which are very popular.

So, let me tell you about these recipes and how they prepare spinach in Georgia.

Recipe no.1 Spinach puree

Ingredients:

  • Spinach, 1 kilogramme
  • Onion, 1 small
  • Unsalted butter, 40 grams
  • Cornflour, 1 teaspoon
  • Double cream, 2 tablespoon
  • Muscat
  • Salt to taste
  • Black pepper to taste

Preparation process

First of all, you should wash the spinach very well. It’s like, you should wash the spinach for about 5-6 times for it to be all cleaned and everything.

Then, you should boil or cook the spinach into the water. Usually people pour the water into the saucepan and let it boil and when it boils, then they put the spinach leaves into the boiling water for about 5 minutes or so and then they take them out and I usually do that, too.

After that, you should melt the butter and add the chopped onion and you should have those two into a frying pan and cook them together.

Then, when the spinach is cooked, you should take them out and let them get cold. When they are cold, you should squash them, so that the excess water that they have will come out.

After that, you should add the spinach to the frying pan, where there is that butter with chopped onion. And you should add the black pepper and salt and muscatt. To be honest, I don’t usually add the muscatt to that dish, however, people like adding it to the dish.

You should cook all of those ingredients into the frying pan for about 10 minutes occasionally stirring, so that the spinach and onions won’t get burned.

Then, you should add 1 tablespoon cold water to the cornflour and add the spinach mixture to it, so that the mixture won’t be that thick. And then you should add the cream and mix everything together.

If you love purees, then you will like this one, too. Though it’s not like that famous potato puree, however, it’s really healthy and full of vitamins, which are essential for us.

Recipe no.2 Spinach in oil

Well, this recipe pretty much reminds me of my grandparents, because my grandmother used to prepare this spinach in oil. Though, mostly my aunt prepared it usually, however, it still reminds me of them. This is a very easy recipe for preparing the spinach and it’s really delicious and eatable.

Ingredients:

  • Spinach, 1 kilogramme
  • Oil, ½ cup
  • Onion, 3 medium
  • Salt to taste
  • Fresh coriander to taste

Preparation process

Well, of course, first of all, we should wash the spinach and we should wash it very well several times. Then we should put the spinach into a cold water and let it be like that for about an hour. But I don’t think, that many people do that and neither do I, to tell you the truth.

After that, you should put the spinach into a saucepan. Then you should add some boiling water, so that it’s pretty much covered with it and let the spinach be cooked for about 10 minutes. Then you should take the spinach leaves out and you should let them get cooled down, so that you can then squash them and get the extra water out of them.

After you have done all of that, you should have a frying pan with oil and chop the onions into very small pieces (that I do in my chopper-blender, which is a very easy way to chop the onions without crying and having those tears running down your cheeks) and you should cook the onions for a couple of minutesuntil the onions get golden in colour and then you can add them to the spinach and that’s it! Then you just have to add some salt to taste and if you like having some fresh herbs in your dishes, you can add some chopped fresh coriander to the dish, but not too much.

Recipe no.3 Spinach with ground walnuts

Well, to be honest, this dish is very popular in Georgia and it’s almost in every supermarket, where they have those prepared dishes and things like that and in those other places, too, where they sell prepared dishes, such as family diners, etc. I really love this dish, too, because it’s really delicious since it has the ground walnuts in it, which makes the dish very tasty and different. And preparing it is not very difficult, either.

Ingredients:

  • Spinach, 1 kilogramme
  • 2/3 cup of walnuts ground
  • Vinegar, 2 tablespoons
  • Fresh coriander, 40 grams
  • Fresh parsley, 40 grams
  • Salt to taste
  • Pepper to taste
  • Pomegranate seeds (optional)

Preparation process

First of all, you should wash the spinach, which needs too much washing, I must tell you. Then you should put the spinach leaves into some cold water and let it be like that for an hour. However, if you don’t have time for that, you can just skip that step, if you want to know the truth.

After that, you can put the spinach into a saucepan and pour some boiling water onto it and let it be on the gas for about 10-15 minutes, so that the spinach will get cooked.

Then, you should spill the water out of the saucepan and let the spinach get cooled down. When it’s cold, you should squash the spinach leaves, so that the excess water will come out. And then you can chop them with your knife. Well, to be honest, I usually don’t chop them with my knife, rather, I put them into my chopper-blender and I kind of blend them, so that it’s pretty much of a puree, than the chopped spinach leaves.

Well, you should prepare the sauce, if you may. You should grind the walnuts, if you don’t already have them ground. You should add some garlic and pepper and mix them together. You should also have the herbs chopped and added to the mixture along with the vinegar. Some may chop them, however, I still use my chopper-blender and I blend them together, so that the ingredients just get into one dish.

You should season your dish and then it’s ready. Some people like having some pomegranate seedson the dish when they serve it and it’s pretty beautiful that way, however, I don’t really love eating them with the dish.
