Souzi
The introduction
Hello everyone, I hope, that you are all doing just fine!
In this article I want to tell you about another recipe of mine, which I prepared the other day. It’s a stock, which is a good idea in winter, of course. I guess, you know, that when the winter comes, people start preparing soups even more often, because people feel like they need to fill themselves with something like water, but not water exactly.
So that, this dish they call it “Souzi” in Georgian and it’s a kind of soup, however, it’s really more delicious, then the usual soup, if you ask me. It has mainly meat pieces and potato cubes in it and that’s all. It’s delicious in that way.
You know, my grandmother used to prepare this dish very often, because we usually had some pork at home and she would prepare it anytime we had the meat there. It was pretty easy to prepare the dish, because we also had the potatoes at home almost every time, so that it was not a problem to prepare this dish.
Anyways, this was one of the first times, when I prepared this Souzi, I guess, so that it was kind of an experiment, however, I really wanted to consume this dish, so that I googled it and asked around and then I just prepared it. To be honest, I didn’t really expect the dish to become so delicious, because I didn’t really know, how exactly I should prepare it, because there are kind of different recipes for it and I even prepared it with some different methods, I guess.
So, let me tell you about the dish, which I prepared.
Ingredients:
- Pork, 400 grams
- Potatoes, 4 large
- Onion, 1 large
- Parsley, 10 grams
- Coriander, 10 grams
- Salt to taste
- Bay leaf, 1 small
- Tomato paste, 5 tablespoons
Preparation process
So the preparation process started with the meat. I had some chopped pork pieces in my freezer, so that they needed to be unfrozen until I had them boiled. Well, I could have them got out of the freezer and put them on the table in a bowl or something and wait for them to get unfrozen, however, it would take much time and I wanted to prepare the dish in a short period of time, so that I started my convection oven and put those pork pieces into it on a high rack and had them like that for about half an hour or so on 200 degrees Celsius. Soon they were unfrozen and they were even kind of cooked, too, so that they were in a pretty good shape and I could just take them out and have them boiled into some water.
When I took the pork pieces out of the convection oven, I had some water boiled and poured into the large saucepan, where I would have prepared the dish. I put those pork pieces into the saucepan with water and waited until the water boiled. Then I spilled the water out and poured some new water into the saucepan and filled it with the water and let it be on a high gas, so that the water would be boiled. When the water was boiled, I turned the heat down to medium and let it be like that, until the pork pieces were cooked. I also put a small bay leaf into the water and took it out after a couple of minutes, when it had its taste emitted into the water.
In the meantime, I took those large potatoes and peeled them and washed them and cut them into small cubes, so that they would be easily eaten in the dish.
I also had the large onion peeled and washed and chopped. And as I always recommend, I chopped it into my chopper-blender, which is a great way of chopping the onions, because that way you won’t have to have your eyes into tears because of the onions.
I also had the fresh parsley and coriander washed and chopped, so that I would have them prepared for the dish.
Well, after an hour or so, the pork pieces were softer and they were cooked, so that it was time for other ingredients.
I added the chopped potatoes to the stock with the pork pieces and I also added those 5 tablespoons of tomato paste. You know, I really love the tomato paste in the dishes, however, you shouldn’t have too much of it, otherwise, the dish won’t be as it should be.
While I had the saucepan on a medium heat, I took those chopped onion pieces and added them to the frying pan, where I also had some oil, so that I would cook the onion pieces. You should know, that you should have the onion pieces cooked in a frying pan on a high heat, so that they will get cooked and not boiled or something like that. However, you should be pretty careful, not to burn them, or else, you won’t be able to use them in your dish, because they will have this burnt taste, which is not good for your dish and people won’t love it. So, you should stir the onions occasionally and they are ready , when they are golden in colour.
After the onions are ready and cooked, you can add them to the dish into the saucepan and have it on a medium heat until the potatoes are cooked. They should be soft, when you taste them and that’s how you know, that they are cooked.
So that, when everything’s cooked, you should only add the salt to the dish and the herbs _ those chopped parsley and coriander and turn the gas off after a minute or so.
You know, people say, that you should add the salt at the end of the cooking, however, I don’t really like it that way, so that I usually add the salt in the beginning or something like that. And that’s how I did it when preparing this dish, too. I added the salt when I put the pork pieces into the new water for cooking, so that the dish would already be pretty delicious when I would add the potatoes for cooking. However, you can add the salt whenever you want, of course, it all depends on you.
Well, I prepared this dish in a pretty large saucepan, and, I must say, that it was a pretty good idea to have it in a large saucepan, because it came out really delicious and I really loved it. I must say, that I didn’t really expect the dish to become so delicious.
So that, I really recommend you preparing this dish whenever you feel like you are thirsty and you want to eat something like that and not drink anything. It’s a pretty easy and delicious and healthy dish for anyone and it will last pretty long and you won’t have to prepare some other dish in the meantime.
