Salmon and French beans in tomato sauce

The introduction

Hello everybody, it’s my another article and now I want to tell you about this delicious dish, which I just prepared the other day. It is a recipe made by me and it’s like not written anywhere else. That’s something, that I came up with while thinking what I could do with that salmon, that I had already cooked, however, I didn’t want to have it without anything, because that way it’s too dry and not very easy to eat. You should have at least some vegetables to eat them with the salmon, so that you can have everything blended well.

To be honest, I love eating some types of fish very much and one of them has become that salmon, which is a very useful thing to eat and everybody should eat it, because it contains lots of vitamins and is good for the eyesight and vision and health and everything. it’s especially good for weight loss and people usually have it in their diet, however, it’s not very cheap to have salmon every day or whatever, so that, you should know, that it’s not like preparing some soup with vegetables and have them very cheaply bought and have the soup for a couple of days. I mean, that kind of soup is very cheap and it’s like a student dish because of that. However, comparing to that, eating salmon can be very expensive and many people just don’t buy it because of that, if you ask me.

Anyways, that was one of the reasons why I ate salmon only occasionally and, besides, I didn’t know what to do with the frozen salmon, so that I used to buy the prepared one in the Goodwill supermarket, where they prepare some great salmon in different ways and they also had this salmon steaks without anything and they were just steamed or roasted or grilled and they were really moist and soft and I always wondered, how they prepared that kind of salmon dish, however, I couldn’t get the recipe or something like that, and, well, I haven’t even asked about that, so that I couldn’t really know how they prepared the salmon, of course.

Well, it has not been long since I started buying frozen salmon, which kind of costs somewhere about 10 laris a kilogramme. And I couldn’t prepare it just in a frying pan as people usually prepare fish in Georgia with flour and plenty of oil. I don’t know, whether the frying pan was not good for frying the fish or I couldn’t prepare it well, but the fact was, that I couldn’t prepare it and that’s why I didn’t like it at all, and I didn’t want to buy any fish because of that. I would just buy the prepared ones whenever I wanted  to have fish, however, it was not cheap at all and I didn’t  usually have fish in my nutrition list, though I knew, that it was necessary for me. Well, to be honest, as much as I wanted to have some fish, I wouldn’t buy it as often and I would just buy some other cheaper things to substitute it, I guess.

So, it was just recently that we bought this convection oven, which my friend recommended and , at first, I didn’t know, that it would be so handy and I thought, that it would just prepare some chicken fillets well and I would just prepare it that way and eat it, however, then I realized , that it could prepare fish very well and that was when I really started buying some fish and preparing it and it was very good, I must say, and it was so good, that the fish became one of my favourite things to prepare, I guess.

Anyways, let’s talk about that recipe, which I prepared and see the details of it and I hope, that you will try and prepare it and you will like it as much as I did.

Ingredients:

  • Salmon, 5 steak, medium
  • Tomato paste
  • Canned green beans
  • Ajika, 1 package
  • Salt
  • Ground coriander
  • Ground thyme
  • Fennel
  • Paprika
  • Ground bay leaf
  • Ground red pepper
  • Soy sauce

Preparation process

So, first things first, you should have salmon bought and have it at home, of course. I have another article about salmon and where to buy it, so that you can read all about that process, however, now I will tell you, that I had already bought salmon steaks some time ago and they were frozen and I had them stored in my freezer and I would take it and prepare it whenever I wanted, because, as I have already mentioned, preparing salmon in my convection oven is pretty easy and you even take pleasure looking at that fish getting cooked without you even bothering about it.

Well, I took those frozen salmon steaks out of my freezer and put them on a high rack into my convection oven and started it and had it on 180 degrees Celsius for about 20 minutes.

After a couple of minutes, I took the lid off and put some salt on those pieces and turned them over and added some salt to the other sides, too. And then I put the lid on again and continued cooking. After a couple of minutes, I decided to have some soy sauce added to the steaks, so that they would have some distinguished taste and I poured some of that soy sauce on those pieces of salmon and then I just let them get cooked.

When the salmon steaks were cooked and they were soft and everything, I took them out, so that they could get cooled down and they could be easily touched without burning my hand. Though I preferred, that they weren’t cold, but rather warm, so that it would be easier to get rid of that skin of the salmon steaks and I would have the meat itself for my salad or whatever. Well, it took me some time and effort to do that and to have the meat separated from the skin and the bones and things like that. However, after some time, I had everything done and I had those steaks divided into some smaller pieces, so that the sauce would get to them easily and the salad would be easier to be eaten. Well, when I had it all done, my fingers were sticking on each other because of the salmon, however, I don’t really know, what it is that causes something like that.

Anyways, then I had to prepare the sauce and I didn’t really know which sauce I wanted, I just wanted the salmon to be in a sauce, so that those pieces of salmon wouldn’t be so dry and they would be delicious, at the same time.

Well, I thought for quite some time and I finally decided to have some tomato sauce prepared and have those salmon pieces put into it. I had this Italian tomato sauce, which was not very thick , though not very liquidy either, and I decided to have it seasoned and added some ground coriander and thyme and red pepper and bay leaf and paprika. I also had this dried fennel, which I added to the sauce, too. Well, I haven’t told you anything about the amount of the sauce, because it’s up to you how much sauce you want to have in your dish. I used some of it, because I didn’t really want it to be like stock or soup or something. I also had this Ajika package, which is made by Nikora company and which is a great thing for almost everything and it’s a spicy sauce and people love it in Georgia. It’s usually made in Samegrelo and it’s known, that it’s their sauce from origin. So, that sauce is very delicious, though it’s pretty spicy, too, so that you should be careful, not to have too much of it. Well, some people love too spicy foods, so that it’s not a problem for them, however, many people can not eat such things and they try to neutralize that kind of stuff by adding some other sauces and that’s what I did mainly here. I had some tomato sauce and added that one package of Ajika and it was still a little bit spicy, however, I decided, that I would have some water or something like that added to the mixture, so that it would not be that thick and it would be like a sauce, and then I realized, that I could just add that canned beans juice to the mixture and that way it would get a little bit tasty water in it and not just some plain water, so that when I opened that can, I poured some of that juice into the bowl, where I had that tomato and ajika mixture and stirred it well.

After that, it was time for my salmon pieces to be mixed with the mixture itself, so that I added those salmon pieces to the mixture in the bowl and stirred a little, so that the salmon pieces wouldn’t get broken or whatever. It only needed the beans, and it was pretty easy to do, because they were canned and they were already ready and I could just add them to the salmon pieces like that and that would be it. So that I added pretty much the whole can of those beans to the salmon pieces and I stirred it, so that everything would get blended together well and that was just that. Then I took the whole salad and put it in a container and put it into the fridge. Well, of course, first of all, I tasted the dish and then I put it in the container and then in the fridge, because if it was not delicious, I would have to add another things to the salad itself and then I would just have to take the whole thing out of the container and return it there after the process.

Well, that was my dish, which I just prepared and the recipe is mine, I guess, because I just thought of it and prepared this kind of salad just by occasion, because I used that stuff, that I found in my fridge and at home and everything, and I think, that it would be better if I had some fresh coriander, because it makes the dishes and that kind of tomato sauces taste very delicious and kind of different, however, I was out of that fresh coriander and I was too lazy to get downstairs and go to the shop and buy some of the fresh coriander. Though, it was not that necessary for the sauce, if you ask me, and that’s why I changed my mind about having it bought. To be honest, I also wanted to have some green peas in my salad, however, I thought, that it would give the salad its own taste and those three tastes would be more than enough for the salad, and, besides, I wanted it to have a little bit of salmon taste, too, and with all those things there, I don’t think, that there would be some of its taste left anywhere in the dish.

Anyways, I hope, that you find this dish very useful and handy and you will prepare it and taste it yourself. I really liked it, because it has fish in it and, at the same time, it has vegetables in it, such as those green beans, which make the dish moist and light to eat and it’s not dry or anything, as it would be, if there was just that salmon in the dish. So, I do recommend preparing this salad and see how it tastes like!
