Salads- Part II
Hello again, hope you liked my previous recipes on salads and I'm just expanding it here for those whose really want to learn more about salads.
Triple Bean Salad
The ingredients needed are
01. Green beans can, (1 can or 14 and 1/2 - ounce) drained.
02. Can wax beans, (1 can or 15 and 1/2 - ounce), drained and rinsed.
03. Dark coloured Kidney beans, (1 can or 15 and 1/2 - ounce), drained.
04. 1/4 cup sliced green onions.
05. 1/4 cup red wine vinegar.
06. 1 tablespoon of olive oil.
07. 1 teaspoon of equal measure or 3 packets of equal sweetner or 2 table spoon of equal spoon full.
08. 1 teaspoon of dried basil leaves.
09. 1 small clove garlic, minced.
10. 1/4 teaspoon of fresh ground pepper.
Combine green beans, wax beans, kidney beans, green onions, Vinegar oil, equal, basil, garlic and pepper in large nonmetallic bowl. Mix well. Cover, refridgerate overnight. Serve chilled.
Healthy Potato Salad
01. 1 and 1/2 pounds new potatoes, quartered (about 4 and 1/2 cups)
02. 1/2 cup Non fat Dressing, (Such as miracle whip)
03. 1/4 cup finely sliced green onions.
04. 4 teaspoons Dijons style mustard.
05. dash of ground black pepper.
06. 2 teaspoons of honey.
Cook potatoes in boiling water until they become soft and tender; drain the water and rinse it well with cold water until the potatoes are cool. Mix dressing, onion, honey and pepper in a largr bowl. Add potatoes and refridgerate.
Glazed fruit Salad
Ingredients necessary for salad are
01. 1 can (about 11 oz) Mandarin oranges segments, drained.
02. 1 cup green seedless grapes or red.
03. 1 cup sliced strawberries.
04. 2 medium bananas, sliced.
05. 1 medium apple, cored and diced.
06. 1/2 cup maries creamy glaze for bananas.
07. 1/2 cup miniature marshmallows.
08. 1/4 falked coconut.
In a large bowl, combine fruit and glaze; toss to coat. Serve immediately or cover and refridgerate. Just before serving, gently stir marshmallows and coconut. If desired. garnish with fresh orange mint.
Bean salad recipe
Ingredients which are needed for this are
01. 1 can of mixed beans.
02. olive oil (about 1/3 cups).
03. 1-2 slices of red onion. 1/4 orange pepper.
04. 1 celary sticks.
05. 1/2 to 1 clove garlic.
06. Oregano - 1 pinch.
07. 1/4 cup of sugar.
08. Basil - a pinch.
09. Balsamic vinegar (about 50/50 with oil).
Drain can of beans in a large bowl and mix well. Chop vegetables, mince garlic and mix with beans. Mix oil and Vinegar with Oregano and Basil. The oil and vinegar should be with 50-50 but mix it to your preference. Add dressing to bowl, stir well and marinate in the refridgerator for a few hours or over night, drain dressing and tranfer salad to a smaller bowl. if you prefer a stronger flavour just keep the salad in the drssing until it's eaten.
Broccoli Salad
This is a basic version of a broccoli recipe. You can add your own ingredients and spruce it up a little, such as any fruits, vegetables, or nuts. You also mix cauli flower with broccoli for an alternative taste. This is a great salad to have at home or to take for your next picnic party. The ingredients needed are,
01. 1 to 2 haeds broccoli.
02. 1/2 cup chopped red onion.
03. 6-8 slices bacon.
04. 1 cup shredded cheese.
Dressing
01. 1 cup mayonnaise.
02. 1/4 cup Vinegar.
03. 1/4 cup sugar.
Fry bacon crispy, drain grease and set aside. cut up broccoli floret's into bite sized pieces, leaving just a little stem. Cut up enough for about 4 cups of floweret's. Give the leftover stem to your kitchen helper. Add onion, cheese and dressing. Refridgerate 2-3 hours or over night. Crumble into bits and add it to your bowl. Toss it well before serving.
