Preparing eggplants

The introduction

This is another one of my articles about some recipes made by me and now I want to tell you about this eggplant recipe, which is pretty healthy and nourishing and easy to prepare and it’s very delicious, at the same time.

So, the other day I just had this idea of buying some eggplants, because I read it somewhere , that eggplants were pretty good vegetable for weight loss and very low in calories and I really like eggplants, so that’s why I bought some of them. Well, actually I bought three of them, however those three were pretty long and large ones and I thought, that it would be easier to cut them into circles that way. And it didn’t cost much , either, I mean, those three cost just 1.70  Laris, so that  I was pretty satisfied with the price, if you want to know the truth.

Well, there are many places , where you can buy some eggplants, however, it’s still the best to buy them in the supermarkets. And, while there can be a price difference between supermarkets and the bazaars in Georgia, buying eggplants in supermarkets are better choice, because there you can just take whichever you want and choose them yourself, while in the bazaars the sellers mostly choose them for you and, well, it’s very hard to tell them to weigh two or three eggplants for you, because that’s not much for them and they want you to buy as many of the eggplants as you can. If you tell them half a kilo, they add more to it, so that it is more than half a kilo and then you feel like you don’t want them to take some things out of that bag and you tell them that it’s okay and let that be like that and you will pay for what it is. Well, to be honest, paying is just one thing and buying stuff that you don’t really need is another, because, when you buy more than you need, then those products get bitter as you can’t eat them all and that’s just a waste, right? So, I always try to buy that enough amount of food that won’t stay in the fridge or wherever too long because no one eats it.

So, buying bell peppers is another thing, too, however, I usually buy them in the supermarkets, too, because there you can choose them yourself and nobody will tell you not to do that or this or whatever, and you can choose the good ones and not be sold some bad bell pepper , of course.

Well, the other things, that I needed were the bell peppers and I had red ones at home, so that I took some of those green ones, too, and I also put some herbs and that was pretty much it. I mean, I had all those other ingredients at home and I could use them in my dish.

Ingredients:

  • Tomato juice, ½ cup
  • Eggplant, 2 medium
  • Parsley
  • Basel
  • Potato, 1 large
  • Red bell pepper, 1 medium
  • Green bell pepper, 2 medium
  • Onion, 1 small
  • Olives, 4 medium

Preparation process

Well, the preparation process started with me washing all those ingredients and I sliced the bell peppers and eggplants and onion and I had the potato peeled and then chopped it into some cubes and I also chopped those eggplants into small cubes.

I also washed the herbs and choppedthem.

Then it was time for assembling all these stuff and so that I put those potato pieces on the bottom of the saucepan, then I added the eggplants and bell peppers and then I added some slices of onion and then I added those chopped herbs and that was pretty much it. It only needed some tomato juiceand I had this tomato juice bought earlier, so that I thought, that it would make the dish taste better, than the usual tomato paste or something, so that’s why  I added the tomato juice on top of my dish and let it on a low gas heat with a lid on. I left it like that for about an hour or so and then, when I tasted the dish, everything was pretty well cooked and I got really excited with those results.

Well, to tell you the truth, as my mother says, it doesn’t need to have much juice and it should be kind of steamed and that dish came out just like that, I mean, other times when I prepared this dish, I would add some water and it would then be very juicy and my mother didn’t really like that, however, it was still pretty good, if you ask me. Though she didn’t like having some juice, so that she would just take the solid stuff out of the saucepan then. To tell you the truth, she loves this dish and she usually had it prepared or my grandmother used to prepare it at home and they would all eat it and they all loved it, however, I didn’t love it t all back in my childhood and I couldn’t really eat it, you know. though they were asking me to eat it and they thought, that I would finally eat it, however, I still coulnd’t eat the dish and I was just wondering why, because I tried several times to eat it and like it, but in vain.

Anyways, this dish was a very popular one in our family and every time the summer came, we would have it prepared at home all the times. And while you think, that you have enough ingredients and that you just put them into the saucepan and have a dish enough for everybody, after some time of cooking, yyou realise, that you thought itt wrong and that the dish won’t be enough for having it for some time, because when it’s cooked, it’s size lessens, I mean, the eggplants get smaller and then you see, that the  dish you thought would be plenty, it won’t be any more than jus t one portion for everyone, I guess. And that’s why it’s necessary to have a huge saucepan for that, because in the beginning, the ingredients are large in sizes and everything and you can’t assemble the dish in a small saucepan for its big portion.

Well, that was about my eggplants with vegetables recipe and I hope, that you will like it, because it’s a perfect light summer dish with not much calories and it’s very delicious, if you prepare it correctly. Well, everyone loves it except for children, I guess, so that you will like it, too, and, besides, preparing it is not hard at all, you just have to assemble all those ingredients into one saucepan and then leave it like that on a low heat for quite some time and that’s it.
