Potato Fry In Lankan Style

Hello friends, hope you all are doing well. Cooking is an art and it needs some real effort to get the best of your culinary skills. With development in technology we are able to cook different cusines in our own homes. Here I want to share with you all a dish my sri lankan friend thought me which is a different way of making a potato fry. It is not actually a fry but a kind of fry. It tastes really delicious and I can gaurantee it. The process is not that complicated but it consumes some time. This is not a dish for a hurry burry cooking..!

Let me first tell about the ingredients that are needed for making this delicious dish.

1. Potatoes 5nos

2, Onions 3nos

3. Dry chilies 6 to 8 nos

4. Turmeric powder 1 teaspoon

5. Salt to taste

6. Oil as needed

7. Mustard - 1 teaspoon

8. Green chilies - 1 nos

9. Ginger Garlic Paste - 2 teaspoons

Having all the ingredients ready it is time for us to cook this delicious recipe. Let us now take a look at the method of preparing this dish.

Take dry red chilies not less than 6 in a mixer jar and grind them as flakes. Keep them aside as you will be needing it later in the preparation of this dish.

Take a bowl and place all the potatoes in it. Fill it with water and add a little salt to it. Turn on the stove and leave the potatoes to boil. It will take around 15 to 20 minutes for the potatoes to boil completely.

Meanwhile you can cut the other vegetables into fine pieces. Once the potatoes get boiled remove them from the stove and peel off their skin. It will be an easy process to peel boiled potatoes skin. Then cut the potatoes into medium sized pieces. 

Keep a frying pan on a lighted stove and add a little oil to it. Wait till the oil gets heated. After that add a teaspoon of mustard and you can know from the popping of mustard seeds that the oil is completely hot. Add the chopped onions into the oil and saute it for few minutes. Continue the process until the onions turns golden brown in colour or till it becomes translucent. Then add the finely chopped chillies into the mixture and continue to saute for a few minutes. To this add the ginger garlic paste and saute it. As the mixture gets concentrated add salt, turmeric powder and the dry red chili flakes. Saute the mixture for a minute. To this add the potato pieces and mix it well. Keep the stove in a medium flame as you will not be adding water to this. This will prevent the dish from getting scorched. Keep mixing it till the essence of the mixture gets into the potatoes. It will take another 10 minutes for the process to come to an end but you have to keep mixing it gently and frequently to get a delicious dish. You can very well observe that the amount of potatoes will be decreased than in the beginning after 10minutes. Turn off the stove and your potato fry is ready to serve. This dish is often served with rice and dhal curry and it is the perfect combo for that dish. It may also be served with other dishes of your choice.

Please note:

i] You are not adding any chili powder in this recipe therefore the spicy flavor for this dish will entirely depend upon the chili flakes used so determine your appropriate amount wisely

ii] Make sure that you don't overcook the potatoes as this can lead to easy mashing of potatoes during peeling and during the constant mixing process while preparing the dish.

iii] While mixing the potatoes do it gently so that all the potatoes in the vessel doesnt gets mashed.
