Onunu (Ripe plaintain and yam)

Onunu is a local food eaten mostly in the southern part of Nigeria by the Kalabari's. It is a healthy and delicious food done by the Southerns in Nigeria(Kalabari). The Kalabari people are mostly known for their rich culture and tradition. The Onunu is one of their native dish. It is the combination of ripe plaintain, yam and red oil all pounded together to for a lump. It is mostly served with the native stew made out of palm oil and tilapia fish.

ITEMS NEEDED:

1. 6 Ripe plaintain

2. A tuber of yam

3. Red oil (palm oil)

4.  1/2 teaspoon of Salt and a little pepper to taste.

PREPARATION:

Wash your plaintain back well, then cut the plaintain in to 3 parts without peeling it. Then peel the yam and cut in big sizes. Set it on fire put water in the pot and allow it to boil till the yam and plaintain gets soft enough. As its boiling, bring out your motar and pestle, clean it well and set it aside. After the yam and the plaintain boils finish start with the yam put it in the motar and pound it. Add plaintain to the yam in the motar consistently. While pounding don't forget to add palm oil a little quantity at first to get the perfect color of the food. Continue that way. A piece of yam, then plaintain then palm oil. You will notice that the think is becoming thick and sticky add yam to make it thick or add a littlle plaintain to make it light. Its your choice. But i prefare it a little light cause its sweeter and delicious like that. After pounding add a little salt and pepper to your desire then pound well again. After pounding roll it into a ball and place in a cooler. its better if served warmed. Serve with stew and Fish(Tilapia). Thank me later for this cool african dish recipe. Enjoy the Meal!!!
