Olivie salad
The introduction
Hello everyone, I hope, that you are all doing just fine!
In this article I want to tell you about this recipe, which is a pretty popular one in Georgia and people have it on tables on almost every feast or party or even just on usual meals, because it’s pretty easy to prepare and it doesn’t cost much and it’s really delicious and light dish to eat, and, besides, it has vegetables in it and, therefore, it’s pretty much healthy, not to mention the mayonnaise, which it has as a dressing.
This dish is called Olivieand , I guess, it’s the dish of the soviet union or something like that, because they used to prepare it almost every time back then and since then it has been a very popular one everywhere.
So that, let me tell you about the preparation of this Olivie dish.
Ingredients:
- Potatoes, 4 medium
- Eggs, 2 medium
- Carrots, 2 small
- Cucumber pickles, 3 medium
- Canned green peas, 300 grams
- Fennel, 30 grams
- Fresh coriander, 20 grams
- Parsley, 20 grams
- Salt to taste
- Black pepper to taste
- Mayonnaise, 200 grams
Preparation process
So, the preparation process starts with preparing the vegetables, I mean, usually you have to wash them first, of course.
Then, you should know, that some people just wash the potatoes and then they just boil them like that and others peel them and boil them peeled. I really like them boiled peeled, because that way they are not sticky and they are not sticking together so much, while boiled with peel, when you peel them, then they are kind of sticky and it’s difficult to have them as small cubes when you cut them.
Well, it’s up to you how you want to prepare the potatoes, however, I usually peel them and boil them that way.
So, when you have peeled your potatoes, you can put them into a saucepan.
Then, you can wash the carrots and peel them and put them into the saucepan with the potatoes, too, and you can add a little bit salt to the saucepan and add the water so that the vegetables are covered with it and have the saucepan on high heat until the water boils and then you can have it turned down to medium and have the vegetables get cooked.It doesn’t really need much time, however, it’s not that easily cookable, either, because the potatoes need some time to get cooked.
In the meantime, you can also put the eggs into another saucepan and boil them. Well, when the water in the saucepan boils, you can turn the heat down and let it be like that for about 10 minutes, so that the eggs will be hard boiled and pretty good for the salad.
In the meantime, you can open the can of green peas and take it out and then you can just pour some boiling water onto the green peas and put them into a large bowl.
You can also wash and chop the herbs _ the fresh coriander and fennel and parsley. Some people like to have the salad in green and they like to have plenty of chopped herbs in the salad, while some people don’t love that and they don’t even have any fennel in the salad.
So that, you can have the chopped herbs added to the green peas in the bowl.
When the eggs are boiled, you can have them peeled and cut into small cubes and added to the bowl, too.
You should also take the cucumber pickles and cut them into halves on long edge or even in more pieces and then cut them into small cubes. Some people don’t like the cucumber pickles in this salad and they just use the fresh cucumber cut into small cubes and it’s pretty good, too.
And when the vegetables are cooked, you can take them out of the water and pour some cold water onto them and have them set aside, so that they will get cold. When they are warm or something like that, you can start cutting them into small cubes and then add them to the bowl, too. Well, some people don’t cut the carrots into cubes, rather they have them shredded, however, I haven’t don’t that so far and I don’t know about it, I just cut the carrots into pretty small cubes, so that my salad will be more green and not yellowish in colour.
Well, anyways, then you just have to season the salad and add some ground black pepper. And then you add the mayonnaise and mix them all together. You should remember, that you shouldn’t mix these things too much, because then the potato cubes will get destroyed and it will become all messy in the bowl.
To tell you the truth, some people even add the crabs sticks to the salad and they like it that way, however, I still prefer the good old Olivie without crab sticks, though if you like those sticks, you should definitely add them, because “the more, the merrier” and the salad becomes better with crabs sticks, I guess.
Well, it’s really good to have this salad at home, because it’s nourishing and, at the same time, it’s very light to eat and everyone just loves it. And, besides, you get lots of vitamins from this salad, so that you should definitely prepare it at home.
