Mexican potatoes recipe

Many people like Mexican roasted potatoes and I guess if you haven’t tasted them you will find them very delicious  and you will prefer them to French fries, or at least that’s how I feel about them and many of my friends, too.

The recipe is pretty easy, if you ask me. It doesn’t need many things, you just really have to have potatoes and just some other stuff for seasoning and things like that. Basically, it’s just the potatoes!

So, until I start writing about the preparation process, you may ask about the ingredients. Well, as I’ve said, they are not much, but I will still write them down just in case you are wondering or want to have them pointed out.

Ingredients:

  • Potatoes 1 kilogramme
  • Paprika
  • Oregano
  • Salt
  • Red pepper
  • Garlic
  • Basil
  • Mayonnaise (optional)
  • Ketchup (optional)
  • oil

So, these are the basic ingredients I guess, but you can use other seasonings if you like as it’s my recipe (kind of) and not the real recipe that Mexicans use or something like that. It’s like an adaptive version of Mexican potatoes.

Preparation process

The preparation process starts with washing the potatoes very thoroughly as they need to be cooked and eaten with skin and not without it. So, don’t peel the potatoes, and when buying them, try to buy such potatoes that don’t have much defects and stuff like that.

I usually scrub the potatoes and I wash them many times if it’s necessary, because they have many things on them and maybe something bad, too, so just be very careful and wash them well. And, just to be sure, I usually put them in a boiling water for some time to avoid any bad bacteria or something to get into my dish.

So, you may have your potatoes in the boiling water for a couple of minutes or even for a half an hour and then you take them out and let them cool a little.

In the meantime, you may prepare some other stuff like seasoning. You take some olive oil or just oil and add some spices to it. The potatoes are usually baked in oven, so, you should take that oven pan and spread some of this mixture on it.

After the potatoes get cooler, you may take them and cut them into four large parts on their length side. Well, if the potatoes are really big, you can cut them into six pieces or something. It’s up to you, I guess.

When you cut all the potatoes you should put them on the pan and then you should spread some oil mixture on them. Don’t spear that mixture and spread it well on those potatoes. And then put the pan in the pre-heated oven on a medium level something like 170 degrees Celsius or 200. It needs about 20 minutes or half an hour to be done, but you should check it and see if they need less time or more time as the size of the potatoes matters and it really depends on that how much time it will need to be done.

When they are ready, you should take them out and drain them from the excessive oil and you may season them with some oregano and paprika and red pepper again.

Now about the sauce. I usually use ketchup with those Mexican potatoes and it’s really delicious. You can also use some mayonnaise sauce. I make it with adding ground garlic and some lemon juice to mayonnaise and that is really good too.
