The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you about this recipe, which is a very popular one in Georgia and which many people love. It’s a thing, that you can’t really refuse eating, because it’s meat and it’s very delicious and it’s just pretty easy to prepare.

This is a kebab in Lavashi, which is an Armenian bread, as they call it and it’s a pretty good thing, if you want to know the truth. It’s like that one, which is used to prepare tacos, you know.

So that, let me tell you about the preparation of kebab in Lavashi bread.

Ingredients:

  • Pork, 650 grams
  • Beef, 350 grams
  • Onions, 100 grams
  • Barberry, 2 tablespoons
  • Salt, 1 teaspoon
  • Ground red pepper, ½ teaspoon
  • Eggs, 1 medium (optional)
  • Ground black pepper to taste
  • Ground coriander to taste
  • Ground thyme to taste

Preparation process

  1. Well, the preparation process starts with the meat. Some people buy the meat , which is already ground, however, some people prefer buying the fresh meat and then grinding it themselves.
  2. After the grinding, you can take the meat into a medium bowl and add the other ingredients.
  3. Well, it’s pretty much easier if you just grind the other ingredients with the meat, too. You can grind onions and even some herbs like parsley and coriander with the meat.
  4. You should also add the salt and the ground red pepper and you can also add some other spices, if you want to, like ground thyme and coriander and black pepper to the meat.  You can also add the ground barberry to the meat, which is sold in the large supermarkets or in the bazaars in Georgia and doesn’t’ really cost much..
  5. You should mix everything well together, for about 10 minutes or so. After that, you can wrap it in a wrapping paper and put it into the refrigerator or in the freezer, until it’s very cold or frozen. However, most people just cook them without refrigerating.
  6. The ways of cooking kebabs
  7. So, there are some ways of cooking the kebabs. Some people like to cook them on sticks and that’s really delicious, I must tell you, however, it’s not always possible and, hence, you should think of some other choices of cooking the kebabs.
  8. Usually, people pour some oil on the frying pans and they put the kebabs in them and fry them on every side. However, I don’t really like that, because then the smell of the cooking oil and kebabs is just everywhere and that’s really bothering me.
  9. You can also cook them on the grill.
  10. I have this convection oven,  and it’s like a grill and I usually place the kebabs there and roast them that way.. It needs about 20-30 minutes to get very well cooked, approximately.

Having kebabs in Lavashi bread

There are those Lavashi breads sold in the supermarkets and many other places in Georgia and they are pretty large in portion and they cost somewhere about 1.20 laris or so, you can have not one, but many kebabs in this one Lavashi bread.

Usually , you need one onion and some barberry for the kebab. You should peel the onion and wash it and slice it into circles and then you can just take that Lavashi bread and put the onion slices on it and sprinkle some ground barberry or the whole ones, if you want to, and you can even have some chopped herbs, like parsley and coriander, or you can even have some tomato sauce or ketchup on top of your Lavashi bread, and you should definitely have some barberry, because it really makes the kebab taste more delicious , than it tastes without it.

So that, you can then roll the kebab into the Lavashi bread and just have it that way. It’s pretty awesome, because that way you don’t get your hands dirty.

if you buy this kind of kebab in Lavashi in bakeries you will have to pay 2 or 3 Laris for it.

Tips for preparing  kebabs

  • You can change the pork with sheep meat or make the beef be more in the mixture and less pork.
  • You should also know, that you shouldn’t use more onions, because that way the meat won’t get stuck together very well and it will be difficult to have the meat have the shape of kebab.
  • The egg is necessary for the meat to get the shape, however, if the meat if fatty enough,  it may not need an egg for the shape. So that, if the meat is pretty fatty for about 30% and even more, then the eggs are not needed.
  • The amount of salt and ground red pepper depends on your taste and the quality of the meat.
  • They usually grind the meat twice, when they prepare the kebabs, so that they will be soft and fluffier, than the usual one-time grinded meat.
  • It’s better if you keep your mixture into the refrigerator for a couple of hours, at least. And it’s better if you keep it in the refrigerator for a night.
