Katah

The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you abuot this very special recipe, which is a very popular one in Georgia and though it’s not that traditional dessert or whatever of Georgia, everyone still loves It and when you go to the bakeries or supermarkets or in some cafes, you will see that, they have this dessert there.

Well, this is called “Katah” and they say, that it’s Armenian katah and that katah has its distinguished shape, which you will recognize just when you look at that katah, and, to be honest, I just love that one and though there are some other types of katahs, the Armenian one is just my favourite, and ,besides , it’s a pretty small one and enough for one person and it doesn’t cost much, either, if you want to buy it in any bakeries or those large supermarkets.

You know, my aunt used to prepare this Armenian katahs back in my childhood and  we just really loved it, however, there were many of us at home when she used to prepare those Armenian katahs and it was always the problem, because we used to eat them all just in a couple of minutes and then there was nothing left, of course. It was really tasty and delicious and that’s why we used to love them so much and I love those katahs nowadays, too, and when I see them sold in some bakeries, I just want to buy and eat them.

So that, anyways, let me tell you about the preparation of this Armenian katah.

Ingredients:

  • For the dough:
  • Butter or margarine, 500 grams
  • Matsoni, 500 ml
  • Eggs, 2 medium
  • Baking soda, 1 tablespoon
  • Vinegar, 2 tablespoons
  • Salt  , a pinch of
  • All purpose flour
  • For the filling:
  • Oil, 9 tablespoons
  • White granulated sugar, 1.5 cup
  • All purpose flour, 3 cups
  • Vanilla
  • Salt, a pinch of

Preparation process

So, the preparation process is not difficult at all, it all depends on the process itself, how you are preparing it. To be honest, some people just buy that frozen dough in the large supermarkets and use that dough to prepare the katah and that’s just it, they don’t nneed to do much of the things that way and they can prepare the katahs in no time, however, the frozen dough is not like the homemade one, and that’s why many people still prefer preparing the dough themselves and use it in their katahs.

Well, first of all, you should take a butter or margarine, which should be on the room temperature and you should chop it with a knife. Or sometimes people just shred it on the shredder and I usually do that, to tell you the truth.

After that, you can add the flour to it and have them mixed together with your hands.

You should also take some matsoni and have the baking soda taken and have some drops of vinegar on it and then you should just put that spoon in this matsoni and whisk it, so that they will be mixed together and then you can add that mixture to the butter or margarine mixture and have them mixed together until you get a  pretty good dough.

When you have kneaded the dough, you should divide it into four pieces and have them rolled out on the table one by one. You can then spread some butter on each of them and make them like envelopes and have them put in the refrigerator. After one hour, you should take them out and roll them out again and then make them like enveloopes again and put them into the refrigerator again.

After that, you should prepare the filling of katah.

You should take that all purpose flour and have it on the frying pan and just have it on a medium heat continuously stirring, so that the flour will get a little bit cooked and a little bit brownish in colour.

After some time, you can add the oil and continue cooking. However, I prefer butter to the oil, because that oil gives it a little bit different taste, if you ask me.

Then, you can add the sugar and vanilla and mix everything well together and then you should divide this filling into four parts, too.

After that, you can take the doughs out of the refrigerator and roll them out and put the fillings on each of the rolled out dough and then you should roll them like some long rolls.

You can then grease them with some butter or oil or you can just take an egg yolk and have it whisked and spread it on top of the roll.

You should then cut the long roll into small pieces and have them put on the baking pan.

You can sprinkle some flour on the baking pan and you should preheat the oven on 180 degrees Celsius and you should put the baking pan into the oven for about 15-20 minutes.

You should occasionally check the katahs and see, whether they are baked or not, because they are usually baked when they have that golden colour after some time of cooking.

Well, when the katahs are finished baking, you can take them out and have them put into some large plate or whatever and let them get cooled down, because having them hot is not a very great idea, if you want to know the truth.

So that, this was the recipe about the Armenian katahs, which are pretty popular in Georgia and people just love eating them and nowadays they usually buy them in the bakeries and there are some bakeries and large supermarkets, where you can buy pretty delicious ones. Two of them are located somewhere nearby  my apartment and I usually buy them there, if I want to have some of that Armenian katahs eaten.
