Hazelnut chocolate pancakes
Trabzon hazelnuts
One thing which the city of Trabzon is famous about are the hazelnuts , is the only city and region in Turkey where this things grow up and around this period the season is booming and in case you don't know one kilogram can go up to even 20 euros so it's a great business for the locals . We are lucky enough to get them for free and we have plenty in our house , sometimes we don't even know what to do with all of it because we don't quite eat so many , usually you need to break them and the roast them for about 10 minutes in the oven so they become super crunchy and tasty . Just the process is so loud when you crack them , one time a neighbor came asked us what is that noise , so we rather not eat them anymore .
I guess now when i am going home to Romania in a week i will take some to my family also .
So due to the fact that i have so many and they are just standing there i was thinking to cook something sweet for once even though i am not the specialist in this sort of things. I remembered my childhood days when my mom she was always cook for us on a Sunday afternoon ''Romanian pancakes '' . She was the same as me not so much of a cooker when it comes to cakes and baking but she nailed this pancakes every single time . Yesterday i said why not i can give it a try and cook some . I checked all my ingredients and i started making pancakes .
Pancakes
Even though this pancake recipe is the same as the original one or classic as everybody knows, i added extra hazelnuts and a scoop of ice cream in the end . What is different from the Romanian recipe is actually the consistency and the style of rolling them , my mum she always makes them with jam inside , mostly fruits jam and she rolls them '' like a carpet ''. Also she ads mineral water instead of milk but i will tell you all about it as i start showing you guys how to prepare them .
So let's cook pancakes !
Ingredients :
- flour ( 150 ml)
- three eggs
- vanilla sugar ( 1 spoon )
- regular sugar ( 2 spoon )
- a pinch of salt
- milk ( 150 ml ) or mineral water
- crushes hazelnuts
- butter
- nutella or any other chocolate cream
- ice cream ( optional )
This are the ingredients i used so let's get started with preparing them !
Step by step recipe :
-My first step was to handle the hazelnuts as i had them in raw shape i had to first crack them and then roast them in the oven for some minutes . When they were ready i cut them into small pieces and sat aside .
-Prepare a hot pan and melt 50 grams of butter inside .
-Prepare also a pot and we start by adding the flour first , 150 ml or with a spoon this i how i do because i never keep a grading pot or anything like that so i just measure it by spoon . Each spoon is 20 grams so count every spoon until you reach your goal .
-Next step is to add the sugar and also the vanilla sugar as well . A pinch of salt and mix them all together .
-Add the eggs and them the milk or mineral water , whatever works for you . I will tell you sincerely this time i used milk but next time if i make this recipe again i will add just mineral water , they become more fluffy like that .
- Also add the melted butter and mix very good so you can get a nice consistency .
-Once we have our consistency ready add some of the crushed hazelnuts inside and place a pan on the fire .
-Once the pan is heated up put with a large spoon a small amount of the liquid dough and spread it uniform around the pan .
-Cook every side for about 2 minutes with the medium fire level . But better check all the time before turn it on the other side .
I forgot to tell you before placing the dough add around 2 spoons of oil into the pan , just make sure not too much so we don't get our pancakes to oily .
-From this amount of dough you can get up to 6 or 7 pancakes , make sure you add just a tiny amount of dough so they will be super slim .
-Once you have them ready we can start with the chocolate filling or jam .
-Take one by one and place nutella inside and then roll them on how you like , i choose this time a more classy style .
I added one scoop of ice cream and some leftover hazelnuts .
