Grandmas Pancakes

One of the favorites by far is the pancake recipe that my grandma passed down to me! It's the pancakes she has been making for my brothers and I since we were little kids and my friends here love them! 

First the ingredients:

(I am from New York so my measurements might be a little different)

2.5 cups of flour 

1/2 cup sugar

1 teaspoon of baking powder

1 teaspoon salt

2 large eggs

3 tablespoons butter

1.5 cups of milk

Any fruit of your choosing! (I am a huge fan of blueberries, apples, and raspberries)

Process:

Add all the dry ingredients together into a bowl and mix until everything is mixed together.

Melt the butter and then combine with milk in a separate bowl.

Take 2 large eggs and separate the whites and the yolk. Put the yolk in with the butter and milk and mix. With the separate whites  use a mixer machine and whip them together. (This makes them fluffy).

After this add the fluff too the milk, butter, and yolk mixture and whip again. 

Slowly add to the dry mixture while mixing it at the same time.

Take put a frying pan and put oil in the bottom so that it covers the pan and put in on medium heat. Take a laddle and scoop some of the pancake mixture and put it in the pan.

Take your fruit of choice and sprinkle it on the pancake. Then take a spoon and put a little bit of batter over the fruit so when you flip it the fruit won't stick to pan. 

Your pancake will have little bubbles and once they are all burst it's time to flip the pancake to the other side! Let the other side cook then take out of pan when done and serve with maple syrup or butter and sprinkle some more fruit on top and enjoy!
