The frittata is a good way to use up vegetables that are going bad in the fridge. I actually made one tonight with some half priced red peppers and mushrooms. This was my first attempt at making a frittata, and I must say, it turned out pretty good. Here's what I made tonight...

Ingredients

  • oil
  • leek, finely chopped
  • 2 large cloves of garlic, minced
  • 225 g mushrooms, thinly sliced
  • 1 red peppers/paprika (or other color depending on what's available) (if the peppers are small, use two of them), seeded and thinly sliced
  • half a red onion
  • 4 eggs
  • 100 ml milk 
  • half packet of bacon
  • salt to taste
  • pepper to taste
  • pinch of rosemary
  • pinch of oregano
  • 75 ml breadcrumbs
  • 25 ml grated cheese (or enough to cover the top)

Directions

Heat oil in a pan and add the red onion and garlic. Sauté until tender and then add the red peppers. Cook for another 5-7 minutes then add the mushrooms and leek. Once cooked, set the vegetables aside. Cut the bacon into small bits and then cook.

Meanwhile, beat the eggs with milk in a bowl until they are light and fluffy. Then add the vegetables and cooked bacon. Pour the mixture into an oven safe pan. It should be a rather shallow pan (I used a springform pan and it worked just fine). Smooth the top of the mixture and sprinkle with cheese. 

Bake for 35 minutes at 180 °C or until the center has set. Let it sit for 5-10 minutes before serving.
