"Fried" potatoes in the oven

Today, I will write about one of my very favourite meals fried potatoes or french fries or chips -no matter how you call it, it is absolutely delicious. It is normally on the side, but I could easily eat it as a main course as well. Here, I want to write a recipee I learned from my mother, which helps make the potatoes taste like fried ones, while they are cooked in the oven. As you can imagine, this way, the potatoes are much healthier (still, they do have many calories, but not AS many as the ones made in the frying pan).

You will need potatoes (as many as you like, depending on their size and the number of people you want to feed), mustard, olive-oil, salt and pepper. First off, you need to slice the outside part of the potatoes and then cut them to small pieces, as if you were going to fry them. Then, you take one glass (250grams) and fill it with three parts of olive oil (approximately 170 grams) and one part of mustard (approximately 80 grams). You should shake it altogether very well and then add salt and pepper to this very same glass. Then stir it again -the result will be something like a sauce. After this, you should put the mixed sauce to the potatoes and make sure it goes everywhere. The potatoes should be like “marinated” to this sauce, because if it doesnt go to some of them, the result will be uneven and, frankly, bad.

You should warm the oven in 250oC (if you have another type of degrees, make sure you do the analogy -we have celsium degrees in our electronic devices) for 10-15 minutes (you can do that while you are preparing the potatoes, so that you don't waste any time). Then, you lower the temperature to 180 degrees and put the potatoes inside. You should choose the option of the oven that cooks with air, but if your oven does not have one, then you should choose the option that cooks on both sides -otherwise, the potatoes will get burned! Leave them on the oven for 40 minutes, but check them a little after 30 minutes have passed, because each oven may vary a bit. If you try them, I am sure you will want to cook them like that all the time in the future!

But for those of you who insist on the great french fries, as you have learned to eat them, I have a tip for them to be extra crispy! Cut them and then put some flour in them -just so that it touches them, do not dig them in a bowl full of flour or something! After that, put some salt on them and put them in the freezer. Leave them there for at least half an hour -I think that the best is to leave them one full hour. Then, fry them normally, on the frying pan -they will taste like potato chips!
