French Garlic and Carrot Soup


Ingredients for 12 people:

400g leek cut into pieces
600g of potatoes cut into pieces
600 g of sliced carrots
1 large onion cut into chunks
400g leeks cut into thin slices
80 ml of oil
1 cube of chicken stock (optional)
Sal q.s.

Preparation:

1st. In a saucepan with 3 liters of water, add the potatoes, leeks cut into chunks, carrot, onion and chicken bouillon cube (optional).
Season with salt.
Stir, cover and cook for 30 minutes.

2nd. Meanwhile, in a saucepan, bring to boil the oil and leek cut into slices.
Stir and cook for 10 minutes over medium heat.

3rd. After the vegetables cooked, pass the soup with a hand blender.
If the soup is too thick add a little more water.
Add the leek cream.
Stir and cook for 5 minutes.
Spent 5 minutes, is ready to serve.
