Today I am going to share a small recipe for dinner. A solution for if you have some leftover potatoes and you don't feel like pasta or pizza.

(The amount of food this recipe will produce is normally for 4 to 5 people, depending on your hunger, age and amount of food you consume)

To start, the ingredients we will need:
- 5 cooked leftover Potatoes
- 1 Beetroot
- 1 leek
- 1 onion
- 1 zucchini
- Sour cream or quark if you know it
- 3 spoons of olive oil
- caraway
- pepper, salt, oregano, thymine and any other herbs you may like

Preparing:
Cut the potatoes in half and carve them out so you have a hole in them, with a brush spread olive oil and sprinkle some caraway over.
Put potato halves in the oven.
While the potatoes are getting crusty, cut the beetroot, leek, onion, and zucchini in small pieces and fry them for 5 minutes in a pan.
Mix the sour cream or quark with salt, pepper, and mixed herbs. Add the vegetables and mix it all well. Leave the cream to rest for a few minutes.
Take the potatoes out of the oven and put the cream in them, et voilá! Here you got some tasty, healthy potatoes for dinner!
You can eat them just like that with some salad or any other side dish you have available or savor :)
