Eggplants with vegetables
The introduction
Hello everyone, I hope, that you are all doing just fine!
In this article I want to tell you about this recipe, which my mother loves so much and she usually buys this dish every time she walks into the Fresco supermarket, because they prepare this dish there and it’s very delicious, I must say, and, besides, it’s all vegetables and it’s very good, though it has lots of oil, however, it’s still good and tasty and it doesn’t really cost much, if you want to know the truth.
Ingredients:
- Eggplants, 1 kilogramme
- Red bell pepper, 2 medium
- Green bell pepper, 2 medium
- Onions, 100 grams
- Garlic, 300 grams
- Herbs, 10 grams
- Oil
- Salt to taste
- Saffron to taste
Preparation process
Well, the preparation process begins with washing the eggplants and then cutting them. You should cut their end, which has those green leaves on them, of course. And then you can start cutting the eggplants into circles. They shouldn’t be very thing or very thick , either, because they will get burned pretty easily if they are cut in thin slices and they won’t be cooked for a long time if they are very thick, you know. so that, the slices should be just normal in sizes.
After you have cut the eggplants in circles, you should have some water with salt dissolved in it and you should put the eggplants slices into the water with salt into a large bowl or something like that, so that the bitter taste that the eggplants have can be gone with the salt and then you can pour the water out after about 15 minutes or so.
After that, you can take the eggplants and kind of squash them with your hands, so that the water, that they absorbed can be spilled out.
Then you can have the eggplants put into a frying pan with oil and have them cooked there on both sides.
When the eggplant slices are cooked you can have them put on a paper or on a plate with small holes, so that the excess oil will be removed from the eggplants.
Well, in the meantime, you can have the bell peppers got ready. You should wash them and cut them into halves and take the seeds out, because we don’t need those seeds in our dish. Then , you can have them cut into slices, too, I mean, they won’t be circle-sized, however, they will be half-moon in shapes and will be easier to eat.
Then, you can have the onions peeled and washed and you should slice them, too, into thin pieces. You can also have them chopped in very small pieces, if you want to, because some people just don’t like seeing pieces of onions in their dishes, however, they are pretty necessary in the dishes, because they give them some pretty good taste, I must say.
After that, you can have some herbs washed and chopped, and, I guess, most of the times they prefer using fresh coriander in the dish. You can also add some fennel or green onions, if you like. You should chop them, of course.
You should also chop the garlic cloves, however, I don’t usually use the garlic into my dishes, so that you can do that if you don’t like garlic in your dishes, either.
When you have chopped and sliced everything, you can have them all into a large bowl and add the salt and some spices, like saffron to your vegetables.
After that, you can add the eggplants to the vegetables and have them mixed together very well and that’s it, the dish is ready and you can enjoy it!
Well, to be honest, I don’t really like having onions in my dish when they are raw, so that I can just put them with the eggplants on the frying pan and have them fried a little bit and that way it will get some great taste and it won’t leave a bad taste in your mouth while breathing. You can even put the bell peppers with the eggplants and onions into the frying pan and have them cooked a little bit for a couple of minutes and then everything will be a little bit cooked and it won’t be a bad idea, because that way the dish will have a kind of different and better taste, I guess.
Anyways, this dish is a great thing for everyone and especially for those, who love vegetables and eggplants and bell pepper. You can also add some vinegar to the salad, which my mother usually does and the dish is pretty delicious that way, too.
Well, this was what I wanted to tell you about the eggplants salad, which is a great way to have a dinner with some other things. This salad is very light and easy to eat and, besides, it’s pretty nourishing and after eating it, you don’t feel hungry anymore, if you want to know the truth.
