Being on erasmus I learned that you can eat cheaply and tastyly if you prepare it yourself. The ingredients that we have in the fridge can conjure up really good dishes.

Do breakfast have to be boring? Definitely not! I would like to offer you an interesting proposition for breakfast namely egg muffins.

What you will need

As for the ingredients, it will be in the very beginning to say that you really can change them freely, of course you have to use eggs, because it is like a base. However, the other ingredients should be dependent on what you have in the fridge. It's really a relatively inexpensive idea for a great breakfast, especially if you want to surprise somebody. I want to introduce you a recipe for two people who assumes the execution of four egg muffins. Of course, it may be necessary to use more ingredients if your molds are too large, I would strongly recommend using silicone molds, because I think it is easiest to make this dish in them.

Ingredients

  • 2 eggs;
  • A handful of spinach;
  • Tomato - here it depends on you it can be a normal tomato, they can be cherry tomatoes, they can be tomatoes dried, use what you have in the fridge;
  • Two slices of ham, optional may also be bacon;
  • Head of garlic, unless you decide to recommend the bacon is then onions;
  • Salt;
  • Pepper;
  • A little olive oil;

Preparation

  1. We set the oven 180 degrees, to be warmed up before when we finish to prepare everything ;
  2. On the hot pans toss spinach, can be fresh, it can be frozen which do you have, with a little olive oil and we throw in the finely chopped garlic, reduce gas and slowly fry;
  3. When the spinach is done, we can join the preparation of the egg. To the bowl we put our eggs, then cut the tomatoes (how you cut them depends on your preferences) we add to the eggs.
  4. Add sliced ham to the eggs. If you will decide on the option of bacon, fry it before you should.
  5. Take  the spinach from the gas and gently add it to the egg mass, then mix, add salt and pepper and another herbs if you like it.
  6. The resulting mass is poured into molds and poured into the oven, I suggest a time of 15 minutes, but occasionally look and check you don't want to burn them.
  7.  After pulling the muffin out of the oven, put straight on the plate.

Did I say that was easy? And it really looks great, you can really modify this recipe, you can add ingredients such as peppers, zucchini, mozarella, parmesan cheese, or add a little feta cheese. There is no need to hold on to the recipe, it is about trying and trying to convince yourself that muffin is the most delicious. I find it a good solution and an alternative to an ordinary scrambled egg or omelet, we use the same ingredients, but the final effect is different. I serve with a slice of bread but you don't need it.

This recipe is rather low-caloric so dinner can be a good idea.

Another option to prepare this dish is to put it directly into the molds, for example two to the bottom we put prepared spinach, cocktail tomatoes and feta pieces, and the other two are complemented by ham, pepper and onion and it is poured with egg mass. After baking, the taste a little different because the stuffing is just at the bottom. See which option would suit you more.

There is also option tu use mushrooms, just remember fisrt you need to fry them.
