Crepes with cheese

The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you about this other recipe, which is pretty popular, too, in Georgia, and it’s really easy to prepare and it’s really delicious. it’s also great when serving it to friends.

This dish is called “Blini with cheese” and all you really have to do is to prepare the crepes from the dough and then put the cheese in them.

So that, you can prepare these blini in no time and it’s a very good recipe.

You can prepare the blinis in the evening and then put them into the refrigerator and then cook them in the morning and have them on breakfast with tea or whatever. You can even freeze them in the freezer and cook them whenever you want to.

Well, let me tell you about the preparation of the Blinis with cheese.

Ingredients:

  • Eggs, 2 medium
  • Water, 1 and a half cup
  • Oil, 3 tablespoons
  • Salt, ½ teaspoon
  • All purpose flour, 1 cup
  • Cheese, 300 grams
  • Some oil for cooking

Preparation process

So, first of all, you should beat the eggs into a bowl and I usually do that into my chopper-blender bowl, which is a very easy way to mix all the ingredients together. Then, you can add the oil and salt and you can also add the water and mix them all together very well.

After you have mixed all the things, you can add the flour and mix them together with a spatula and after a little bit of mixing, you can then mix them together into the chopper-blender, too.

Now that the dough is ready, you can take the frying pan out and have it on a high heat for it to get hot. You just need some drops of oil for the pan to be greased with it.

After the pan is hot, you can take a tablespoon of the dough and pour it onto the frying pan, so that it covers the whole bottom of it. There are special frying pans for crepes, which are pretty good for this, however, the casual frying pan is not a bad idea at all, either.

In 2 minutes or so, the crepe will be ready on one side and when it’s dried, you can take it out, so that you shouldn’t cook the other side of the crepe yet. And you should do that for every crepe, until the dough is finished.

After that, you can have the cheese shredded on a shredder or you can just shred it into that chopper-blender and that’s one other thing, why I like this machine.

When you have the cheese shredded and the crepes are little bit colder, you can take one or  a little bit more teaspoon of cheese and put it into the middle of thecrepe and then wrap it, so that there won’t be any escape from the crepes for the cheese. And, you should know, that the cooked side of the crepes should be inside the blini and not outside.

When you have wrapped all the blinis, you can either cook them right then, or you can store them and cook them whenever you want to. If you cook them, you should have some oil poured into the frying pan and put the blinis into it and cook them on each side, until they are golden in colour, which doesn’t really need much time, so that you should be careful not to burn those Blinis.

Well, this was the simple recipe for the cheese blinis, which are very delicious and people just love eating them.
