Chvishtari

The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you about this dish, which is very popular one in western Georgia and it’s a very good thing and I especially love it and that’s why I usually buy it in the supermarkets, however, it’s really easy to prepare it and I sometimes prepare it at home.

This dish is called Chvishtari and it’s a pretty good thing and if you know Mchadi, then I will tell you, that it’s something like that, however, it’s like Mchadi with cheese in one dish, if you want to know the truth.

Well, nowadays, you will find Chvishtari in many bakeries and diners and large supermarkets, which offer prepared dishes to their customers and you won’t really need much money to buy one Chvishtari, because it usually costs about 1 Lari or 1.50 Laris. I know this one place in Tbilisi, where they prepare pretty delicious Chvishtari, which is pretty large and it only costs 1 Lari, so that I usually buy it there and, besides, this place is just on my way home, so that it’s pretty comfortable for me to buy that Chvishtari there and eat it until I get home.

Anyways, let me tell you about the preparation of Chvishtari with Megrelian recipe.

Chvishtari

Ingredients:

  • Sulguni cheese, 200 grams
  • Egg, 1 medium
  • Sugar, 1 teaspoon
  • Oil, 100 ml
  • Corn flour, 400 grams
  • Butter, 50 grams
  • Salt, 1 teaspoon
  • Milk or water, 230 ml

Preparation process

So , first of all, you should have the corn flour put into a bowl, where then you will add the beaten egg and butter and sugar and salt. You can mix them all together and then you can just add the milk or water. They say, that it’s better if you add some milk, because that way the Chvishtari will be softer and fluffy or something like that.

You should mix all the ingredients together with yyour hands, however , you will need to mix them for about 5 minutes or so, so that the dough will be assembled. It shouldn’t be very dry or very watery, of course.

When you have prepared the dough, you can have it divided into 6 pieces and you should prepare small balls out of them.
