So, this is still about the Christmas Guruli Ghvezeli recipe, however, it’s a little bit different, I mean, here I will write about the preparation of the dough, too, and this Christmas Guruli Ghvezeli is a large one Christmas Guruli Ghvezeli and not small portions. However, this one large pie then is cut into several pieces, it all depends on the amount of people, who are at home during Christmas.
As I have already written in another article, Christmas Guruli Ghvezeli is a traditional Christmas pie, which people usually bake on Christmas, however, it’s mostly common in the western parts of Georgia, where that Guria region is located, which is a region of origin of Christmas Guruli Ghvezeli as they say. The word “Guruli” means “from Guria” in Georgian, so that it explains everything, I guess.
Christmas Guruli Ghvezeli recipe no.2
Ingredients:
- Milk, 500 ml
- Eggs, 6 medium
- Egg yolk, 1 medium
- Margarine or unsalted butter, 50 grams
- Active dry yeast , 1 teaspoon
- Salt to taste
- All-purpose flour
- Cheese, 500 grams
Preparation process
So, you should first boil the eggs and the process is pretty easy, you should just pour some water into the saucepan and put the eggs inside and let the water boil. After it boils, then you should wait for about 5-7 minutes for the eggs to get hard boiled and not something else.
In the meantime, you can prepare the dough. It’s not a difficult process, and it’s not even very time-consuming.
You should have some warm milk, where you will pour the active dry yeast and you should then set it aside for about 10 minutes, so that the yeast will become active and do its thing. You can even add some sugar to the milk, so that the yeast will get active pretty fast.
When we see, that after a couple of minutes, the yeast started its action, we can add one egg to the mixture and then we can also add the margarine or unsalted butter on a room temperature. We should add some salt, too , and we should mix the ingredients together either with our hands or into the bowl of a standing mixer or in just a bowl with mixer. I think, it’s easier to do that with the mixer, of course.
Well, after that, we can add the flour little by little and we should add as much flour, as the dough will need, I mean, the dough should be a soft one and we should add that much flour, so that the dough becomes soft ball or something like that.
Then, we should leave the dough like that for some time.Usually the dough needs to be set aside for about 1 hour or more, so that it will get doubled in size. They usually put it in some towels with the bowl, where it is, and they set it nearby some warm place.
In the meantime, you can shred the cheese on the shredder or into the chopper-blender, which is a better choice, if you ask me. You should also take those hard boiled eggs and cut them into halves or even into smaller pieces.
After the dough is ready, you should take it out and roll it out on the table.
Then, you can put the shredded cheese on one side of the dough and put those cut eggs onto it. And you can also add some pieces of the butter and then you can just cover it with another part of the dough and seal the edges.
After that, you can put the Guruli Ghvezeli on an oil greased baking pan and spread some egg yolk on top of it.
You should have the oven preheated on 180 degrees Celsius and you should put the Guruli Ghvezeli into it for about half an hour,however, you should occasionally check it, so that it is not getting burned or something like that.
After the Christmas Guruli Ghvezeli is ready, you should grease its top with some butter. And then, they usually cut the Guruli Ghvezeli into that amount of pieces, how many people there are in the house or at the table.
Well, sometimes people just prepare as many Christmas Guruli Ghvezelis as they want, because then the guests visit the other day and they would like to eat some Christmas Guruli Ghvezeli, too, of course, so that it’s not about how many people reside in the house, but about other people , too.
For me, personally, Christmas Guruli Ghvezeli is just for tradition, because I don’t really love it as much as I love other things prepared on Christmas or New Year, and my mother doesn’t like Guruli Ghvezeli at all. I guess, that’s one of the reasons, why we don’t usually have Christmas Guruli Ghvezeli at home during Christmas, but the other reasons are present, too. For example, it’s more traditional to the western parts of Georgia to bake the Christmas Guruli Ghvezeli on Christmas and it’s not that tradition in the eastern Georgia _ where I am from.
Anyways, if you love hard boiled eggs and if you like Khachapuri, then , I guess, you will love this Christmas Guruli Ghvezeli, too, however, I know, that many people don’t like it and they prefer the usual Khachapuri to it.
