Chicken livers Megrelian

In this article I want to tell you about this recipe, which is pretty awesome and very delicious and very healthy, too, so that it’s not just a simple dish, rather, it’s a pretty fancy thing with all its vitamins and nutrients in it.
This dish is chicken livers by Megrelian recipe. Well, this means, that it’s from Samegrelo, which is a region in western Georgia and they love pretty spicy dishes there in Samegrelo, however, they prepare some pretty delicious things there, if you want to know the truth. They have really good dishes there and everyone knows that and it’s very well-known the Megrelian cuisine in the whole Georgia and there are some special Megrelian restaurants in Tbilisi, which serve only the Megrelian dishes, for example, while driving or walking on the embankment of Mtkvari near the Baratashvili bridge somewhere, you will see that billboard saying , that there’s this Megrelian House somewhere nearby , who servers Megrelian dishes and, I know, that they are really delicious there.
So that, let me tell you abuot this Megrelian recipe for the chicken livers, which is a great one for serving the guests or just having it for yourself.
Ingredients:
- Chicken livers, 1 kilogramme
- Sour-cream, 3 tablespoons
- Thyme, ½ teaspoon
- Ajika, 1 teaspoon
- Onion, 1-2 medium
- Salt to taste
- Black pepper to taste
- Butter, 50 grams
- Coriander, fresh, 50 grams
Preparation process
Well , the very first thing to do is to prepare the chicken livers, of course. It’s really important, which chicken livers you buy, because there are sometimes good and not-so-good chicken livers, and, besides , you can buy them either frozen in the supermarkets, or fresh in some places. For example, there are some kind of wagons or small shops, which have the fresh chicken livers from the chicken companies, which are here in Georgia and they produce that many chicken livers, so that they can distribute to many places like that every morning or something like that. So that, I really prefer buying the fresh chicken livers there, and, besides, the prices are pretty reasonable and they don’t really cost muchand you see what you are buying and how much exactly you are buying, while buying the chicken livers frozen is not a very best idea, because when it melts, it’s not 1 kilogramme, _ it’s less than one kilogarmme, and, besides, you don’t really know when they were frozen and where they were, etc. However, sometimes frozen chicken livers are better option than the fresh ones, of course. If you are not going to prepare the chicken livers at that very moment, you can buy the fresh ones and put them into the freezer and freeze them yourself that way.
So, you should wash the livers very well and put them into the frying pan and put it on a medium heat.
Then, you should add the salt and the sour cream and put the lid on.
After some time, the livers will omit some juice and they will get cooked in that juice with steam and things like that inside the frying pan. You should have them like that for about 10 minutes or so.
In the meantime, you can peel the onions and wash them and slice them like circles.
Then, you should take another frying pan and pour some oil in it or some butter and have the sliced onions put into it and cook them until they get golden brown in colour.
When the livers are ready, you should spill the liquid into that frying pan out and then you should just have those livers on a high heat without that juice.
You should also add the cooked onions and some butter and cook them like that.
You should also add some ground black pepper and thyme and mix them well together.
Meanwhile, you can dissolve the Ajika sauce into one tablespoon of water and add the mixture to the cooking livers into the frying pan. Perhaps you don’t know, what Ajika sauce is and I can’t really tell you all about it in this article, however, you should know, that the Ajika sauce is a Megrelian sauce prepared from red peppers and red bell peppers and tomatoes and it’s pretty spicy and it’s really delicious. there are different kinds of Ajika sauces sold in the supermarkets in Georgia and you can just buy them and use them into your dish. In this case, it’s said, that this Ajika sauce should be spicy prepared without tomatoes and there are some Ajika sauces in small packets, which are pretty much like that and they are really spicy, too.
You should also wash and chop the fresh coriander and then add it to the dish and you should cook it that way for about 15 minutes or so. When the livers get kind of roasted or fried, you can turn the heat down and have them on the gas for some time like that and the dish is ready.
