Chicken in a Lemony Sauce

Sometimes I get tired of cooking chicken the same old way. I looked for recipes on my usual American and UK websites (sometimes I look elsewhere, but it's just easiest for me to find recipes I on these types of sites). I wanted something simple and quick. I ran across a recipe that was made by a popular American seasoning brand. Of course that brand doesn't exist over here, so I made some changes based on what I had in the kitchen and voila! A tasty meal! I also made some other alterations based on my own preferences. The boyfriend REALLY liked this one. He's requested it a couple more times since I made it originally.

Ingredients

1/4 cup flour

1/2 teaspoon garlic powder
1 tablespoon unsalted seasoning mix (any combination works!)
2 pieces boneless skinless chicken breasts
olive or canola oil
1 cup chicken broth
1 tablespoon lemon juice
1 tablespoon dried oregano

Directions

Mix flour, oregano, and the seasoning mix in a bowl. Rinse chicken under water and evenly coat with the flour and spice mixture.

Heat oil in a frying pan and cook the chicken completely. Remove chicken from the pan.

Mix the broth, lemon juice and remaining flour mixture in a bowl. Make sure it is well mixed in order to avoid clumps in the sauce. Add the mixture to the pan and bring to a boil, stirring constantly. Cook 5 to 7 minutes or until the sauce has thickened. Slice the chicken into smaller pieces and return it to the pan.  Cook until the chicken is warmed again.
