The introduction

Hello everyone, I hope, that you are all doing just fine!

In this article I want to tell you about this other recipe, which is a pretty different one and I just found out about it recently. It is a very good and delicious cake, to be honest.

Well, this cake is called Chabela and it’s like a wedding cake, as I read it on the Internet, however, it doesn’t really resemble a huge wedding cake , of course, if you ask me, but it’s a pretty good one and can be used on weddings, too.

I just saw this Chabela cake recipe on the internet recipe web page occasionally and I just decided, that it was worth preparing, because it looked pretty good, on the photo, if you want to know the truth, however, I didn’t know, how it was going to be, of course, and I was a little bit scared about preparing this Chabela cake and didn’t want it to become bad, however, I still tried and prepared it and it came out pretty good on the first try , I must say.

So that, let me tell you about the preparation of this Chabela cake.

Ingredients:

  • For the biscuit:
  • Lemon, 1 medium
  • Eggs, 8 medium
  • White granulated sugar, 150 grams
  • All purpose flour, 150 grams
  • Unsalted butter, 1 tablespoon
  • All purpose flour, 1 tablespoon
  • For the jam:
  • Peach, 150 grams
  • Water, ½ cup
  • White granulated sugar, 150 grams
  • For the glaze:
  • White granulated sugar, 400 grams
  • Water, 150 ml
  • Lemon, 30 drops
  • Milk, 1 tablespoon
  • Colouring, 4 drops

Preparation process

Well, the very first thing to prepare is the biscuit, of course. So that, you should take that one lemon and wash it and then shred its skin on the shredder, but be careful, not to shred the white thing, too, because it’s pretty much sour and it is not needed in the biscuit.

After that, you can take the 3 eggs and separate the egg yolks from the egg whites and have the egg yolks in a small bowl, because you will need them.

In a separate bowl, you should beat one egg and add the egg yolks from the bowl, you should also add the 150 grams sugar and have them mixed very well together. I usually do that into my standing mixer bowl, which is a pretty good idea, because you can do some other things, while the mixer is mixing the eggs and sugar.

When the eggs and sugar is very well mixed, so that it has a whitish yellow colour, you should beat another two eggs into it and mix them together as well. And you should do that until all the 8 eggs are used.

After that, you can add the shredded lemon zest and mix everything together.

Well, then you should add the all purpose flour to the mixture and mix them together with a spatula or with the mixer, if you want to.

After that, you should take a baking pan out and grease it with some butter or oil and you should sprinkle 1 tablespoon of all purpose flour on it. Then you should pour the prepared dough into the baking pan and you should preheat the oven on 180 degrees Celsius and put the baking pan into the oven for about 20-30 minutes.

You should check whether the biscuit is ready or not by having a wooden stick put into it. If the stick is a little bit wet when you take it out, then the biscuit is still not baked yeat.

When the biscuit is ready, you should take it out of the oven and set it aside and let it get cooled down.

In the meantime, you can prepare the jam.

You should take the peaches and wash and peel them and take their stones out.

After that, you can pour that ½ cup of water into a saucepan and let it get boiled. You should then put the peeled peach pieces into the water and let it be boiling until the peach pieces are become very soft and kind of dissolved into the water and become like a porridge.

After that, you can take it out of the gas and when it gets cooled down, you can squash the peach mixture, so that it will get rid of the excess water.

Then, you can take the porridge into the saucepan and add 150 sugar and put it on a low heat continuously stirring, so that finally you will get a jam out of it.

After that, you can set it aside and let it get cold.

In the meantime, you can take the baked biscuit and have it cut into halves.

You should then have the jam spread on the bottom sheet of this biscuit and put the second sheet of the biscuit on it.

After that, you should prepare the glaze.

You should pour 150 ml water into the saucepan and add 400 grams of sugar and let the water get boiled. After that, you should stir it continuously and when the water gets boiled again, you should have some lemon juice dropped in it. After that, you should have the mixture on the heat, until you  get a syrup.

After that, you should take it from the gas and let it get cold. When it gets cold, you should have it into the standing mixer bowl and have it mixed until it’s very white.

Then, you should add the milk and 4 drops of the colouring and mix them all together.

You should then pour that glaze on the top of the biscuit and that’s just it, the Chabela is ready!

You can have the Chabela set aside for a couple of hours, so that the biscuits will become softer and moister and everything will get assembled that way and it will be more delicious to eat after those couple of hours.

So that, you can prepare this cake on special occasions and have it on birthdays or weddings or whatever. It’s a pretty good one if you don’t like cream fillings and things like that and that jam filling just really fits the cake. The cake itself doesn’t need too many different ingredients and it’s not an expensive cake, I must say, and it doesn’t really take too much time and effort preparing it, if you ask me.
