The introduction

Hello everyone, I hope, that you are al doing fine!

In this article I want to tell you about the other recipe, which is a very cheap recipe, I can say, and, at the same time, a very delicious one. You know, I have maybe already written an article about beans stock, however, everytime someone prepares beans stock, it is always different, I guess. I usually try my beans soup to be very delicious, however, it's still not as it should be and I don't really know why.

Well, anyways, people really love beans soup in Georgia and they prepare it pretty often. It's just beans and nothing else, however, there is this region called Racha in Georgian mountains and it's kind of a diffferent place with different people and they like to prepare beans with some ham, which is just a glourious dish. I really love it and if you are ever in Racha, you should definitely try their beans soup with ham and their Lobiani, which means, that it's beans  with ham in a dough, which is then cooked and is very delicious.

So, let me tell you about this beans soup recipe, which I prepared the other day.

Ingredients:

  • Beans, 300 grams
  • water
  • onions, 2 medium
  • salt to taste
  • ground coriander to taste
  • ground thyme to taste
  • Svanetian salt
  • Fenugreek to taste
  • oil
  • Fresh coriander, 20 grams
  • Ground walnuts, 4 tablespoons (optional)
  • Ham, 200 grams (optional)

Preparation process

SO, the preparation process begins with beans being washed and cooked a little. I mean, you put the beans into the saucepan and add a little bit of water, so that they are covered. When the water boils, you take the saucepan and pour the water out. After that, you have already boiled some water into an electric kettle or something like that and then you add that water to the beans in the saucepan and you should fill the saucepan.

you should have that water boiled, too, and it doesn't need much time, as it's already very hot and almost boiled.

When the water starts boiling, you turn the gas down and let the beans get cooked.

In the meantime, you should peel the onions and have them washed and chopped pretty nicely. Well, I usually chop them into my chopper-blender, which is a very easy thing to do and, besides, you won't cry while chopping the onions, which is a very good thing!

When you have chopped the onions, you should pour some oil into the frying pan and put the onion pieces into it and have them cooked, until they are golden brown in colour. You should be careful not to burn the onions, because if they get even a little bit burned, then the whole thing will be awful and it will have a taste of burnt food, so that you won't be able to use those onions in your dish, rather, you will have to prepare it without onions or just cook other onions again. Well, in that process I like to add some salt and ground thyme and coriander to the onions, so that they will get some better taste.

Meanwhile, the beans can be a little bit cooked and then there's this one thing, that I use to do. I take the beans out of their stock and put them into the frying pan, where my cooked onions are and I cook them both together for a couple of minutes. It's really an important step in cooking beans, because this gives the dish its own delicious taste, which I love so much.

After the beans and onions being cooked together, I return them to the saucepan in that stock and let the beans continue cooking, which needs quite some time, because the beans are usually not that easy to cook in a small period of time. Usually it takes about three to four hours to get cooked, however, it all depends on the types of beans and if you had soaked them in water a night before or just before cooking. Well, that's what I don't like about cooking beans _ that it takes too much time to get cooked.

So, after some time you can add some ground walnutsto the beans and make the dish taste even better. I really love beans with ground walnuts, and you can add those ground walnuts to the beans  when frying in the frying pan and that will be a better choice, I guess.

You can also add some sliced ham pieces to the cooking beans and onions in the frying pan and fry these ham pieces with them, too, so that it will have a great taste of ham. And, well, it should be smoked, because otherwise, it won't have that special taste as it should have. You know, once I tried to add some kind of ham, which was not smoked and it was just boiled and it didn't taste that good. There's this traditional thing in Racha _ that mountainous region in Georgia, they prepare beans with smoked ham, which they prepare themselves and store the ham in their cellars or somewhere and it tastes reallly delicious. If you are ever in Racha, it's a pity not to taste their beans with ham or Lobiani, as I have already mentioned. It is really something and some people even go there just to taste their beans with ham!

Anyways, then, I like the beans to be mashed and not the whole ones, so that I usually mash them kind of in the end of their cooking. However, many people just love the beans as they are and they don't want their beans soup to be like mashed or a cream-soup, because when you mash the beans, it's like a cream-soup after that.

Finally, when the dish is almost ready, I chop the fresh coriander in my chopper-blender, or you can just chop them with knife and I add them to the dish and then I just turn the gas off in a minute or so. Then you can have a lid on the saucepan and let the dish get assembled itself. I mean, you should't really eat the dish right away, because it won't taste like it should be, however, it's still not that bad and many people just don't wait a little bit and they just eat the beans soup immediately.

Well, to be honest, I really like to let the dishes get assembled or whatever in the saucepan for a while and then taste them. And the beans soup is just better the next day, because then everything is just like one piece and it tastes like just one dish _ the beans soup. So that, you should definitely try this recipe and prepare the beans soup, because it's pretty cheap, you can have it plenty with just some beans and it's very delicious and healthy and it's pretty reccommended. However, you shouldn't eat it plenty, because it can upset your stomach. and you shouldn't eat it cold because of the same reason, too.
