Ingredients

  • 4 tablespoons oil
  • 5 garlic cloves, minced
  • 2 green jalapenos, diced (for a milder dish, remove the seeds)
  • 2 cups cooked jasmine rice, chilled (you can do this the night before)
  • 1 tablespoon white sugar
  • 1-2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon worcestershire sauce
  • 1 chopped green onion
  • frozen peas or other vegetables
  • handful of chopped fresh basil
  • handful of chopped fresh cilantro (coriander)

Directions

Scramble the eggs in a pan then set aside. Heat the oil in a pan over medium-high heat. Cook your frozen vegetables then set them aside too. Fry the garlic until golden and then add the jalapeno and chicken. Cook thoroughly. Once the chicken has finished cooking, add the rice, sugar, soy sauce, and worcestershire sauce. Stir ingredients together. When the mixture has blended, add the green onions, scrambled eggs, basil, and cilantro. Cook for another minute then serve with additional soy sauce per taste.
