Banana pound cake

The introduction

In this article I want to tell you about my other recipe, which was a combination of some other recipes and it became one recipe then, after I decided to have some of the ingredients from one recipe and some of them from another. You know, it’s not that easy to follow just one recipe, when you want to create something else or if you don’t want to have that exact recipe used in your cooking. Sometimes, you just need to change something, so that it will be just right for you and by that I mean, that some people don’t really love too sweet things, while some of them just can’t eat cakes or whatever if they are not sweet enough. So that’s why there are so many different recipes for different people and they can choose whichever they like between them, or just like me _ create the new ones. I really like creating some new recipes, however, then after some time if I don’t prepare it again, I kind of forget the recipe as I don’t really write it down, so that’s one of the reasons why I am in this blogging stuff now _ so that I can write my recipes here, because writing for some purpose gives me a motivation to write them down, otherwise I wouldn’t bother writing them and every time I prepared that kind of dish I would just invent the new recipe, I guess.

Anyways, that’s what happened the other day, too. I was looking for something, that would be sugar-free and delicious at the same time, however, I didn’t want it to taste like bread or nothing at all. I wanted it to have some kind of cake feeling, though it wouldn’t be too sweet, because sugar was not in my ingredients list or in any list at all. So that I started surfing the Internet and I was looking up those recipes and I was trying to find something, that would be closer to my imagined cake recipe, however I didn’t really find much things, I mean, I found some great and amazing and deliciously looking cakes, however, they were all sugary, of course. Then I decided to have a look at this banana cake and then I thought: “Why not?” and I decided to use banana instead of sugar in my pound cake, which would be not prepared with flour, but instead, it would have this oatmeal in it, which I would grind to be more like that all-purpose flour.

Well, I particularly had everything decided and I had bought those ingredients and stuff like that and then it was time to prepare the cake. However, I was not really sure, whether it would come out as planned or not, because I hadn’t prepared something like that until that and I was not sure, which ingredients would be good for it and which not and I wanted to have all those things in there in that dough and I wanted it to be delicious, so that I tried pretty hard not to over-add the ingredients as I usually do. And I wanted it to have that chocolaty look and I had all that cacao powder added to it and that’s one of the things too _ I really like adding too much cacao powder to my cakes as I really love its taste in them. However, sometimes it just becomes too much and then it has that bitter taste of too much cacao powder, you know.

Anyways, let’s start with my baking and let me tell you how I prepared this pound cake, which came out pretty delicious, I must say and pretty nourishing, I guess, because I couldn’t really eat another piece of it after just one tiny piece.

Ingredients:

  • Banana, 1 medium
  • Kefir, 100 ml
  • Baking soda, 1 teaspoon
  • Drops of vinegar
  • Egg, 1 medium
  • Vanilla
  • Cinnamon
  • Cocoa powder
  • Roasted peanuts
  • MacCoffee hazelnut flour powder, 1 package
  • Rum essence, some drops
  • Ground oatmeal, 1 cup
  • Some cereal cornflakes
  • Butter, 50 grams
  • Oil, 2 tablespoons

Preparation process

So, I have this blender, which pretty much can be a good thing for preparing those pound cakes and I don’t need using my standing mixer all the time, when I just want to have some small cake prepared, because that standing mixer is pretty large and it’s kind of difficult to take it out all the time and then clean it and things like that. So that I pretty much use this blender in many things and it does the job perfectly, if you ask me. However, you shouldn’t try too hard, I mean, you shouldn’t add too much pressure on it, because in that case the blade can get loose or something like that and become useless.

Well, I put some butter into the blender and beat an egg and added the kefir with the baking soda, which I dropped some vinegar on and had them mixed together well. Then I added the banana, cinnamon and cocoa powder and rum essence and vanilla and some oil and I also added one cup of ground oatmeal and I turned the blender to blend everything together very well. It was a pretty easy thing to do, because I didn’t have to do much things, I mean, I only had to add the ingredients and let the blender do its job then.

So, after a couple of minutes, I turned it off and tasted the mixture and it tasted good, I guess, so that now it was time for the peanuts. I had them roasted in the convection oven until then and now I just had to add them to the mixture in the blender, so that it could chop them into smaller pieces and they would be spread all over the cake dough. And the blender did that pretty well and I was really satisfied with my decision.

The only thing left was to put the dough into the baking pan. I have this small red baking pan for pound cakes, which I find very useful and which is just perfect for this kind of dough and so that I took the baking pan out and greased it with some oil and put the dough into it. The dough was kind of thicker than I expected and that’s why I thought, that maybe it was not good for the pound cake, however, I couldn’t really change anything after that and I just put the dough into that baking form. Then I added the cereal on it and dug those things into the dough. I put the lid on the baking form and put it on a low rack into the convection oven, which was preheated until then. I switched the convection oven on the 180 degrees Celsius and put it on 50 minutes and then I went and relaxed the whole time until it was finished.

To be honest, I was really looking forward to tasting the banana oatmeal pound cake, because I hadn’t prepared something like that until that time and it was very interesting how it would taste.

When the convection oven finished its cooking and the time was up and everything was ready, I went there and took the baking pan out of it and let it sit aside for a while so that it would get cooler and it would be easier to take the pound cake out of it. Though , I guess, it didn’t even need cooling, because it was so very well cooked, that it would get out of the baking pan itself without any help. You know, sometimes it’s just very hard and difficult to take the pound cake out of the baking pan, especially, when it’s pretty soft and light and, well, mostly, I prepare the pound cakes which are pretty soft, because I really like them and they are easier to eat and they don’t give you that heavy feeling in your stomach afterwards when you eat them.

So that, after a while, I took this square plate, which I put on top of the baking pan after I took off the lid from it and turned the baking pan upside down, so that the pound cake would come out on that square plate. And I immediately felt that the pound cake was out of the baking pan and that was when I took the pan off of it and looked at my gorgeous banana oatmeal pound cake. It was just really beautiful and it was just a perfect shape and I just couldn’t wait to taste it. The smell was just great. It smelled the chocolate and rum and peanut butter and it would be very good once I tasted it.

When I cut the cake, it had all those small pieces of peanuts all over and that’s what I wanted, if you want to know the truth, and, well, the taste of the cake was just amazing. It had this little sweetness of banana and that was pretty much what I wanted, too, so that everything was just great and I was very satisfied with my cooking skills at that time. Well, I must say, that I kind of didn’t really expect that pound cake to be that good, because I thought, that it wouldn’t be any sweet and I would not like it that much. You know, once I prepared this oatmeal thing with cheese and it was very good and I really liked it, and I even have its recipe in my articles, however, when you want to eat something sweet cheese bread is not something that you would want to eat, of course, so that in that case, this banana oatmeal sugar-free pound cake is a pretty good choice and one can prepare it some time. If you want it to be sweeter, I guess, you can add another banana and it will be pretty much more delicious, than this one and, trust me, when I prepare it another time, I will add more bananas to the cake, because that way it will be more like a cake and not like bread. It’s a really good choice for anyone on a diet or a healthy eating or things like that and if one can not eat much sugar or doesn’t want to eat sugar, then this is a great choice for them. I can say, that it’s kind of a life savor thing, I mean, if you can’t have some sweets and chocolate and cakes, then you can prepare this one and it will be better, than eating some sugary cakes and sweets.

Well, that was all about my banana oatmeal pound cake. I hope, that you got all interested in preparing it and I think, that you will want to prepare it some time and taste it, because it’s a really healthier choice of cakes than the actual cakes, however, they are more delicious, of course, than this sugar-free one. Though, it’s not that great to eat all those sugary stuff and that’s why you can substitute those cakes with this one and it’s not that bad, if you ask me. I was just thinking about its calories and, I guess, it’s something like maximum of 1000 calories in the whole cake, because it doesn’t have much ingredients, which can add some more calories to it. And, as I’ve already mentioned above, you can’t really eat more than one piece of it at one time and that one piece is just about 50 or 100 grams, I guess, it all depends on how large piece you will cut, of course. So that, the cake doesn’t have much calories and it’s sugar-free and it’s really a healthy one to eat.
