A Healthy Simple Salad
I LOVE salad! But one thing I've never liked about salads is all that creamy dressing. It adds so many calories and makes it well.. seem just not as fresh to me. I much prefer oil based dressings or vinegarettes.
This is a no-frills salad. It's quick, easy, doesn't require a lot of chopping, and quite healthy. The lemon oil can be a bit expensive depending where you're at, but it's worth it. I only use it for salads such as this one, so it lasts quite awhile. And you really don't need much of it.
My boyfriend introduced this salad to me actually. It's something he's often made as a side dish to meals he's cooked. The very first time he cooked for me he also made this salad - and boy was it a tasty meal! Enjoy!
Ingredients
- 1 bag of ruccola
- 1 half of head of iceburg lettuce
- leek
- lemon oil
- ground black pepper
- ground sea salt
Directions
Slice lettuce into smaller pieces. Rince ruccola and iceburg lettuce pieces under water. Place ruccola and lettuce in a large bowl. Thinly slice the leek. Slice as much as per your preference (I like a lot!). Toss into the bowl with the lettuce mixture. Pour about two tablespoons worth of lemon oil on top. Grind a small about pepper and salt on top. Toss to coat.
This is my go-to simple salad that accompanies most of my meals.
