food is amazing ,If you are a foodie you can experiment a lot here.

depends on your lifestyle

Is the language easy to get to grips with? Are there language courses available at the University?

well , one has to learn French here in order to survive.
there are very few people who speak English , its better to take French classes .
However, most of the colleges offer free French classes to International students as a part of their course.

Where would you recommend to go on a night out in Paris?

There are plenty of bars and restaurants at every street , depends on your taste and lifestyle , you will be able to find many options.

What good cultural sites are there to visit?

one can spend days in paris visiting various museum's and exhibition.
Centre Pompidou and nearby area is the best for art lovers.

Is there any other advice that you could give to students going to Paris in the future?

Come to paris only if you are sure to study here .
Lifestyle is little different from UK & USA .

Teaching method is also different here, language issue ( if you don't know French ) can be troublesome
