Easy French crêpes with Thermomix

When you live in the magnificent city of Paris, crêpes are everywhere! So today, I would like to share a super easy and quick recipe for some delicious, soft French crêpes. I found this recipe on the web and I was quite excited because it looked uncomplicated but I still had to modify it a bit to adjust it to my taste buds. I prefer my crêpes to be more on the savory side rather than sweet. However what I truly love about this recipe is that you can whip it together on a busy day because it requires little effort and the ingredients are everyday items you can easily find in your refrigerator. Moreover, it is the perfect recipe for when you are actually craving crêpes.

I will be making this recipe using the Thermomix and I understand many of you may not own one but even without the machine, it is still an effortless recipe so I hope I can at least inspire you to start cooking up these delicious pastries.

What ingredients will you need?

For a serving size of about 8- 10 crêpes (depending on size and thickness), you will need:

  • 250 grams of plain flour
  • 500 grams of milk
  • 3 eggs
  • 2 tablespoons of melted unsalted butter
  • a pinch of salt

How to make this delectable recipe?

  1. Pour 500 grams of milk into the Thermomix.
  2. Crack three eggs into the milk.
  3. Mix it for 5 seconds on speed 4.
  4. Add the 250 grams of flour into the mix.
  5. Throw in a pinch of salt over the flour.
  6. Mix the blend for 30 seconds on speed 6.
  7. Take 2 teaspoons of unsalted butter and place it in a little bowl. Microwave for 20 seconds and pour in the somewhat melted butter into the mixture.
  8. Blend it all for 5 seconds on speed 3.
  9. Pour the mixture into a bowl and close it with a saran wrap or a lid.

  11. Place the mixture into the fridge for 30 minutes.
  12. After 30 minutes has passed, take the bowl out and prep your non-stick pan.
  13. Place the non- stick pan on the stove above medium heat.
  14. Use a stick of butter to spread onto the pan.
  15. Use a ladle to pour in about 1/3 or enough to just cover the bottom of your pan. Make sure not to make it too thick otherwise you will have large pancakes!

  17. Once you see it turn a bit brown at the bottom, flip to the top. This is when you can add whatever condiment you would like such as cheese, eggs, cold-cut meat, tuna, etc.

This recipe has been modified for savory crêpes but I use it for preparing sweet ones as well! However, if you prefer your crêpe to be on the sweeter side then you can also add sugar and vanilla extract to your mixture (at the same time you add the flour).

I usually enjoy my crêpe to be very filling! Following step 15, I usually add egg and spread it around and afterward, I immediately add some shredded cheese, salt and pepper, and meat, and then, I fold it halfway. I let it stand for about 20-30 seconds and press on top, and then flip and repeat. Make sure the egg is cooked and voilá, you've got yourself a luscious crêpe!

For sweet crêpes, you can use jam and butter as stuffing, or fruit and cream. However, today I decided I would finish up the last bit of what is left of my Nutella and use this as my filling. I put a bit of whipped cream on top and planted some strawberries and raspberries, and my dessert was ready! Hope you enjoy this super easy and appetizing recipe! Bon appétit!
