Sri Lankan fried rice recipe

While I was living in Sri Lankan I loved to eat fried rice which is very easy to make and very tasty. So, I like to share my experience of making fried rice with you.

Ingredients:

- Rice (Two cups)

- Three scrambled eggs

- Two hundred g of meat

- Two carrots (if you are not good at cutting carrots into small pieces then you can grate the carrots by using a grater).

- One leek (just the leaves of the leek and cut into small pieces)

- Salt, one large onion, three garlics, five curry leaves, chili flakes

- Fish sauce and soy sauce if and only if you like the taste of it. It is not mandatory.

- Olive oil

Method:

First, we must cook the rice. If you have a rice cooker then it is easier to cook the rice in perfect way. If not, you can add rice in to the pot, plenty of water and some salt. Then turn on the heat and cook under the medium heat. You can taste the rice while cooking and when you feel that the rice is cooked enough then strain the additional water by using a strainer. (It is simple and easy just like how you cook pasta)

Then as the next step add some oil to the pan and add chopped onions, garlic, curry leaves. When it turns in to a golden color add the meat, chili flakes and salt and cook it until the meat get fried. Then add the chopped carrot and leek. After it cooked for a while add the crumbled eggs, fish sauce and soy sauce. Then cook it for another three minutes and then taste it. If you feel that you need more salt or chilies, you can add them according to your taste. If you do not like chili flakes then you can skip it.

Then add the rice in to this mixture and mix it well. After that you can eat it with a chicken curry or tomato sauce.
