Cooking in the student dorm: Asian inspired noodles

Today in the student dorm we are cooking again and the dish is inspired by the Asian cuisines, which my friend and I really enjoy. Once, we have made vegan sushi also by using our improvised kitchen that we have in our student room and about which you can read in one of my previous articles.

For today’s recipe the ingredient’s that we are using are the following:

  • 80 grams of rice vermicelli

  • Half of red bell pepper

  • 2 cloves of garlic

  • Vegetable mix which includes mushrooms, green beans, carrots

  • 2 tablespoons of soy sauce

  • 2 tablespoons of brown sugar(kind of optional but recommended)

  • 1 tablespoon of curry

  • Salt according to taste

  • Other spices such as nugmeg and herbs of various kinds

  • Mix of seeds such as pumpkin, sun-flower

  • The zest of half a lemon

  • Vegetable oil – about 1 tablespoon

Preparing the vermicelli 

The first step is to prepare the rice vermicelli by boiling them for 5 minutes. When we strain the pasta, we make sure to keep 3 to 4 tablespoons of water in which the vermicelli have boiled. To this water is added the 2 tablespoons of say sauce and also the brown sugar. We will use this mix a little bit later for making the vegetable sauce.

Making the vegetable sauce 

Now, for the sauce, we cut the red bell pepper and the garlic into small chunks and stir fry them into a pan where the vegetable oil has been heat it up. To this we also add the other frozen vegetable mix and stir everything together, let it cooked for a bit and than pour the water, sugar and soy sauce mix over it. Mix to combine and let it cook for a couple of minutes, adding all of the other spices and seeds.

Putting everything toghether 

In the end, the boiled vermicelli noodles are put over the veggie sauce and again combined together. At this point, if you feel the need, you can season the dish with some lemon zest and more spices, if not the meals is ready to be served and is best when is warm. And thats it!
