Neapolitan recipe: Gnocchi

Besides trying dozens different types of pasta, there is one more typical delicious dish called gnocchi alla sorrentina. Here is a recipe to make it on your own!

Neapolitan recipe: Gnocchi

Ingredients:

  • 250 grams of mozzarella
  • 300 grams of flour
  • 1 kg of potatoes
  • 1 egg
  • Salt (optionally)
  • 100 grams of grated Parmesan cheese

For tomato sauce:

  • 1,2 kg of tomatoes (or 1000 mg of tomato sauce)
  • Salt (optionally)
  • 6 leaves of basilic
  • Olive oil Extra Virgin (optionally)

Instruments:

  • Masher for potato
  • Pulping machine
  • Slotted spoon
  • Heat-resistant dish for stoving

Cooking process:

  1. Wash potatoes intensively under flowing water to remove the dirtiness from the skin. Put potato (with skin) into the pot with water, add some salt and boil approximately for 40 minutes. Meanwhile cut mozzarella on small cubes and temporarily put it into the cool place.
  2. Let’s move to tomato sauce preparation. Wash tomatoes under the flowing water, cut them into 2 parts, remove the seeds (instead of tomatoes you can use fabricated tomato sauce). Put tomatoes into the pot, place it into fire for few minutes. Then grate them into pulping machine and collect flesh in the deep dish.
  3. Put tomato flesh into the pan, add some olive oil and basilic leaves. Cook on slow fire, mixing continuously.
  4. Let’s turn back to boiled potatoes – clean them from the skin and prepare the working space for our gnocchi: dress the flour and create the small flour mountain.
  5. Using the masher, crumble up potato into the center of flour mountain. Add one egg and salt, then start to beat the mix till it won’t become uniform paste. If it seems too sticky it’s better to add some more flour.
  6. Cut the paste into long cylinders thickness of 2-3 centimeters. Cut cylinders crosswise on every 1-1,5 centimeters creating gnocchi. Put the kitchen towel on the table, fill it in with the thin layer of flour, spread gnocchi on it.

  7. Boil salty water, add some olive oil and put gnocchi inside. When they start to surface, remove them from the pot with the help of slotted spoon.
  8. Now it’s time to integrate our ingredients: put gnocchi into heat-resistant dish, add some olive oil. Pour out tomato sauce, mix it. Two last ingredients you shouldn’t forget to put on the top are grated parmesan and mozzarella cubes. Bake it in grill mode with 250° during 5 minutes.
