If you do it early, it is easy.

You need to have at least 500 € per month.
Is the language easy to get to grips with? Are there language courses available at the University?
It is hard. There are courses but 6 months is too little to learn it good.
What's the easiest or most economical way to travel to Coimbra from your city?
Cracow (train)- Warsaw (plane)- Porto (train/bus)- Coimbra.
Where would you recommend to go on a night out in Coimbra?
Se Velha, NB Club, house parties.
And for eating? Can you recommend some good restaurants in Coimbra?
Canteens and many other restaurants.
What good cultural sites are there to visit?
Not many.
