HOW TO DO DORAYAKI  ( Doreamon ‘s beloved cake)

I love reading Doraemon comics, in addition to Doraemon's presumably the most curious thing to do is Doraemon's donut. Do not understand what the cake is so magical that a talent as full of you as you love it until then until recently I made myself understand "why". To pick your husband picky nostalgic praise again, then know the "level" charm of this dish is high. That donut is called Dorayaki

Making Dorayaki at first feels very leisurely. The formula on the net many, all short and easy to understand, raw materials are nothing special. So I made to the fourth, fifth something new completely satisfied. The reason is because the current formulas do Dorayaki Muffin-Pancake method: mix all the ingredients together and fry. This is very quick and easy. But the downside is that if mixed slightly or a little longer, the cake will have problems. Although the bread is still breading, but it will eat the bread slightly. Looking at the cross section saw many gas holes, the feeling of cross-section is a bit like the bamboo roots in Vietnam.

This type of cake is still edible, but Dorayaki, which I ate in Japan, is soft and spongy. So I changed a bit in the formula. Specifically, remove the egg white and beat with cotton and mix with the rest. Doing this when frying will be a bit long but the cake is guaranteed to be very soft and smooth cotton. Moreover, it is possible to go through the day (the other type of cake that will last long and fast hard).

Because of the taste and taste of each other, so in this article I introduce both ways to make Dorayaki cotton sponge cake like cake and Pancake style, you can choose your own preferences.

 

Dorayaki style with foam soft cover!

* Quantity: 20 small cakes 5-6 cm diameter

* Material

1 egg and 1 yolk (eggs weigh 60 - 65 grams / whole fruit)

15 grams of sugar

10 grams of honey

1/2 teaspoon vanilla extracted

80 grams of fresh milk without sugar

10 grams of cooking oil

90 grams of flour flour (or flour flour number 8) (or instead of 75 gr of multi-purpose flour and 15 gr of corn starch)

1/2 teaspoon (teaspoon) baking powder

1 egg white - room temperature

20 grams sugar (to beat eggs)

1/8 teaspoon (teaspoon) cream of tartar

 

Dorayaki Style with Pâncke recipe

* Material

2 chicken eggs - cold (will help the bread blooms better)

30 grams of sugar

10 grams of honey

70 grams of pastry powder (wheat flour 8)

1/2 teaspoon (teaspoon) baking powder

1/2 teaspoon vanilla extracted

1. Put eggs, sugar, honey and vanilla in the pan. Beat until the ingredients blend, do not need cotton eggs.

2. Sift the flour and flour into the shade. Mix. Try to mix as fast as possible, do not mix too carefully because will make cakes. Cover up, refrigerate for about 15 minutes. If you get too thick, hard to pour, then add 1 teaspoon of water, mix well (try not to do this because the more cake mixed the longer the longer).

3. Paste the cake as in recipe 1. When pouring flour, just keep the vertical spatula perpendicular to the pan, the powder will spontaneously flow into the circle. Note when the flour does not batter the powder.

* Some important notes:

In the no. 1, it is necessary to beat the eggs and mix the powder carefully, avoiding the air bubbles because of the bubbles that the new soft and foam.

- It is better to use butter to fry than to use cooking oil (without the smell of burning oil)

- Use good non-stick pan, flat sole. You should fry in the stove or electric stove to heat evenly on the bottom of the pan (instead of concentrating on some points).

- For very small fire, avoid the fire quickly when the gut is not ripe. I set the 2/6 level of the electric stove. Measure the thermometer, the pan is about 100 degrees Celsius. If you can not adjust the flame smaller, you can prepare a moist towel, before pouring the dough, put the pan on the towel to reduce the heat of the pan.

* Bread and cake preservation:

- After frying, let the cake cool down on the rack.

The traditional Dorayaki cake is the red bean paste. If you want to make beans like jam and the ball will need a lot of sugar -> very sweet cake. So if you want to make red bean paste, I think the way to make beans of moon cake will be better and sweet.

- In the video I use Nutella is very delicious. Some of the other types of peanut butter can be peanut butter, fresh whipped cream, egg whites (such as Su Cream cake), green tea (last formula link) ...

- With the cake to follow the formula # 1, can wrap nylon cake, refrigerator for 1-2 days since. When eating, place the cake out for the cake back to room temperature and soften it back. Or put the cake in the microwave (cover the cake to prevent the cake from drying), warm up in about 20 - 30 seconds with a capacity of 600 Watt. Multiply the cake should be inserted immediately
