It's not dificult. You just have to check the boards in the universities and pay atention to the publicity in cafeterias, copy centers. Or you can just go to a real estate agency.

What is the food like? What are your favourite dishes?

Unfortunatly there's a lot of fried and unhealthy food.
However Tapas are good :)

There are many bars around town.
The Momo Pub is a great place to drink a cocktail or a beer. It has a small garden with a fountain. It's a nice place. (near to the historic center).
Later you can go to D3, Apolo (in the new part of the city)...

What advice would you give future students headed to Santiago de Compostela?

Bring an umbrella! It rains a lot..
