Visiting winery in the suburbs of Naples

Winery is the magic place, where grape transforms into the wine. I was lucky to visit one of the wineries in Campania regions, something like 1,5 hours away from Naples. Before I couldn’t imagine that wine keeping has so many rules to follow:

The room should not have any foreign smell! Salami and meat, cheese and onion, fruits and nuts make a perfect combination with wine, but only during its degustation. During production process, all these delicious things should be kept in separate place.

It’s important to avoid any kind of devices or instruments which have no concern with wine. Wine production is a delicate process, so even small vibration can take a toll on.

Best place for a winery is a dark cave. As is commonly known, light has a negative influence on wine as well as an incorrect temperature. It causes aggregation and the reduction of polyphenols (antioxygen which makes a positive impact on our health).

Temperature should be always stable – around +10-12 degrees for white wines and as maximum +14 degrees for red wine. Every deviation can influence on wine quality.

An ideal storage for aging of wine is a coopered wooden container. It helps to strike a balance between liquid and ambient environment.  Wooden containers have an attractive presence so it’s a nice decoration to every wine cave. Wooden containers have different capacity – their volumes could differ from 7,5 to 200 hectolitres.
