Remember the first time I tried Egg Coffee in Hanoi three years ago, that year also in Giang Van, Nguyen Huu Huan street. I just remember the café restaurant is located in a small niche (called niche because it is very small), on the second floor, then only some tables with low chairs only. I remember the cup of coffee that year is very fragrant, but slightly sweet, coffee is sweet but eggs are always sweet, but I remember the aroma of eggs and coffee.
Egg coffees are brewed quite simply. The bartender must choose fresh raw eggs to not smell fishy. Coffee must also be the purest type of Vietnam, with a passionate aroma. Eggs are collected by yolks, hand-wiped or hand-woven until it smells like a cake and then poured hot coffee in the middle of the cup. Egg emerges on top of the cup.
I think the way to make egg white is not too complicated, but it requires subtlety and skill. Perhaps in Hanoi, the number of consistent cafe egg processing only count on the finger. Formula is nothing special or secret knows how to hide but few places can make this drink successfully. The secret is in reducing the rate of eggs, coffee and milk so that the mouth is just right, harmony is not too sweet, not bitter, dank in the smell of passion.
You should drink when it is hot to feel good taste

Apart from that, I would like to say thanks to the machine which came to life has increased the maximum satisfaction of customers. Along with that the development of the press ... all made the egg cafe cup, from a popular dish, gradually upgraded to faster and faster process of making Egg Coffee.
Cafe Giang does not turn on any kind of music.
Here I feel 100% quiet, or at least I only hear the sound of laughter.
I may say that maybe that might be part of the reason people like going back to here. Perhaps not only to drink an authentic egg cup but also to meditate and find some nostalgic past, to remind of the past and memories.
It's here, I remember six years ago, when I greeted my parents in Hanoi to go to study at high school in Hanoi, since then I went to many places, I went to Asia and I went to go Europe.
I have set foot in many countries; I have been to many places to enjoy strange drinks, from sangri, volka, to Thai tea ... but maybe somewhere in Hanoi, Just Café Giang that I could find myself so in peace.
The peace which is not that just the normal peace but the peace of the person who has been continuously travelling to so many countries.
If I take a count on the countries I have visited, it would be 21 countries: Vietnam, Thailand, Laos, Cambodia, China, Austria, France, Germany, Spain, Italy, Greece,… etc.
Many countries isn’t it?
But just here. I had a cup of Egg Coffe.
