Going Herb Crazy
I have been in Hofn for a month now and while I'd like to fill you in on all of the happenings in the past month, I think I'll just dive right into the here and now. I might jump back every now and again to my first weeks here but anyway... about today.
Today was a pretty average day. I woke up and went to my office and spent several hours working voluntarily for the Erasmus Mundus Students and Alumni Association. I'm very lucky to have my own desk in the Nyheimer complex, which is also where my boyfriend works. Nyheimer houses the local public library, continuing education center, conference hall, junior college, and University of Iceland research institute. I have a station in the university area.
In the afternoon we did our usual Friday grocery shopping and then a friend of ours picked us up and took us to a nursery about seven minutes outside of town. While the nursery has closed for the season, they still have some fresh herbs that they've let us take. This is our second trip out to this nursery to get oregano, thyme, and mint. My boyfriend loves cooking and especially loves fresh herbs.
We have SO many herbs that our freezer is busting with them. The next project is to pluck them all, dry them, and possibly gift some to his parents for Christmas. They said they only wanted things they could eat or drink so... this is something. Anyway, the herbs have taken over one of the spare bedrooms in our house - it's kind of funny actually.
After our herb excursion, we came home and got to work cleaning them (or at least I did). My BF got started on dinner preparations. Lucky for me we were having Icelandic lamb, which we got straight from the farm! Delicious! Icelandic lamb is particularly tasty. We seasoned it with our fresh herbs, of course, and served it with piedmont peppers and mushroom risotto.
We had hoped to go to a concert this evening, but it was unfortunately sold out. I didn't know they would have to sell them beforehand here - I thought they would just be sold at the door. Next time I guess. So, instead of going out we stayed in and plucked herbs.
Herbs, herbs, and more herbs. And there's plenty left for me to pluck tomorrow :)
