A Taste of Iceland
So this isn't exactly a taste from my home, but it certainly is a taste from Icelandic... which is my home at the moment. A couple weeks ago my boyfriend and I went out to a local farm and bought some lamb shoulder blade chops. We smothered them in fresh herbs (thyme and rosemary), olive oil, and salt and let them marinade for a good hour. Icelandic lamb is the best! We served it with risotto and piedmont peppers - so good!
One of the best parts about Icelandic lamb is that they graze on the hillsides around Iceland and self-season themselves. They eat fresh herbs that grow around Iceland and that is what makes them taste so good. I've had lamb in the USA before, but it isn't even comparable to the lamb you can get in Iceland.
