Depends on what you're into, there are varieties of local and continental restaurants tp choose from

Yes
How much does it cost to live in Bialystok?
Around a 100 euros per month in a shared(2 people) students dorm
Is the language easy to get to grips with? Are there language courses available at the University?
Nah, Polish is quite difficult but Universities offer language courses
What's the easiest or most economical way to travel to Bialystok from your city?
Plane
Where would you recommend to go on a night out in Bialystok?
Metro Club, M7(free entry and beers for students on Thursdays), Black Diamond, Coco Havana, Rokoko
