Changing French Visas!?!?

Hey everyone! 

I'm studying at a university for one semester this fall but i'm feeling like it wont be enough to satisfy my travelling appetite so I want to become an au pair for a while after the semester is finished. I'm just wondering if anyone has done a similar thing and can offer some advice as to how to change from the student exchange visa to an au pair visa (I'm from Australia), for example do you have to leave the country/return to your own country to fill out the applications again?

Any experiences/advice would be amazing!
