I was about to make my dinner one night when I saw the email about the jamon quiz. The menu that night was one horizontal piece of salami surrounded by two parallel slices of bread, a. k. a. sandwich.
While eating such a delicious meal I couldn’t get off my mind the idea of having jamon and cheese in my sandwich instead of bland and the cheapest piece of “meat” I found in the supermarket. I like sandwiches, so my challenge here is having a toast with a Spanish wine next time I eat this:
MUSHROOM-SALMON SANDWICH
INGREDIENTS for 4 Erasmusu
· 25 grams butter
· 250 grams mushrooms
· 250 grams brown bread (I prefer brown bread because it seems tasty to me and it’s healthier)
· 25 grams mozzarella
· 100 grams black olives
· 1 oregano teaspoon
· 2 small onions
· 150 grams salmon (optional)
· 4 eggs
· 400 ml milk
· Salt
· Black pepper
· Olive oil
The main ingredients are vegetarian so it’s suitable for everyone. I added some salmon because it isn’t so expensive here but even bacon fits. Feel free to change anything you like/dislike.
Let’s start with the setup-up.
Chop the onions in small pieces, the smaller the better since the idea is taste all the ingredients in each beat. Dice the salmon. Cut the mushrooms not so slim because it has a large amount of water and it will reduce in the pan. Slice the olives.
Pour some oil into a pan and turn up the knob at point 3. Oil shouldn’t be so hot because we’ll first add the onions and we want to brown them, don’t fry them. Spread some salt and pepper.
Put in the salmon around 5 minutes before the onion is ready. If you have the feeling of cooking the recipe with bacon maybe you should add it a bit earlier. It will be faster with bacon because you can find bacon strips in any supermarket.
You will realize when onion is ready because of the color and also the hardness, not crispy but smooth.
Add the olives and mushrooms when onion-salmon are ready.
If your patience is reaching the limit turn up the stove because we just need tenderize the mushrooms and they will lose the water quicker.
Meanwhile, you can stir the eggs and mix it with the milk in a bowl.
Spread some butter around the oven tray and place the bottom slice bread over it. You can also spread butter over them.
When the mushroom, salmon, onion and olives mixture is ready, distribute it over the slices of bread in the tray. Put a slice of cheese over each slice bread and cover it with the top slice of bread.
Pour the egg-milk liquid over the top bread and spread some oregano, it makes the sandwich beautiful;-)
Put the tray into the oven and bake it for approximately 30 minutes at 200ºC. This is an important step. Bear in mind that what we want is a crunchy top layer and a soft and soak bottom bread. The point of this recipe is the contrast between both sides.
I choose this recipe because it’s easy, cheap, fast (but long enough to take a couple of beers while cooking) and suitable for anyone and however it’s really tasty. It fits with Erasmus life.
